Ayurveda forbids consumption of Yogurt/Curds/Dahi with Eggplant/Brinjol/Baingan, or Bitter Melon/Karela, or Fish. The reason is that yogurt releases toxins when mixed or consumed with any of these three items. Therefore, if you noticed, when making Baingan Bhurta, the Brinjol is roasted directly on fire, and the skin is completely peeled off. This has nothing to do with improving the texture of Bhurta because when beating the pulp smooth, the skin will be integrated evenly. The sole reason is from the health standpoint. Now you know! This is also the reason why I don't order Eggplant Parmesan at an Italian restaurant.
What you called Baingan Tawa Fry, is one of tne traditional dishes of Maharastra. We call it " Vaingeye chi Kachri or Fodi". In almost all maharastrian marriges it is served along with " Batate chi Kachari." In any case , it is really a very tasty dish. Thanks for uploading it. It is really very commendable of you to introduce such diverse dishes from different parts of Indian cusine. Thanks🙏
