Dandelion Walnut Pesto
2-3 Foraged bunched of dandelion greens
5-ish cups of walnuts
1-2 cups of parmesan cheese (grated)
3-5 Tablespoons of olive oil
3-4-5 cloves of garlic
1 lemon (juiced)
Salt to taste
Thoroughly wash and dry dandelion greens. Chop them and transfer into a food processor. Add remaining ingredients and blend for 2-3 minutes. Sample your creation and adjust flavors as necessary (5 Basic Flavors). Scoop pesto into jars, label and refrigerate/freeze. Pesto should keep frozen for 2* years.
Yields: 2 pints of pesto 💪

mine is thinner,not so bushy leafy n it is a lower plant,the flowers of the cat's ears are bigger n brighter yellow,more defined flowers.
