Benedict Cumberbatch did an excellent job doing the voice of not just Smaug, but learning Black Speech to voice Sauron. The sound/voice editors did excellent work adding effects to both voices as well.
There actually is a simple explanation for why the spiders could talk even after Bilbo took off the ring. And that is they didn't talk because of the ring. They just happened to start talking after he put it on. In the books, it's made clear that they simply have the ability to talk sort of like Smaug.
I think that's fair and probably how id answer to. However in the movie it's explicit that they started talking when he put on the ring. Why would they not start talking beforehand? It would seen very odd to make the decision to not make them speak and then just make them speak on cue when the ring is on since that would be telling the audience that is the rule. Simple solution was to just make them speak from the beginning before the ring was on and just not make it seem that the rule was in place.
