Dan - I found your videos researching for a trip to Calabria in 2025, but all your regional food-centric videos are so, so good. The way you center food from a sophisticated, and regional, but also “down home” way, is the kind of content You Tube needs. I would definitely watch a whole series of your take on regional Italian cuisine, like a more real Stanley Tucci version. LOL. Calabria looks like such a unique and stunning part of Italy, and selfishly would even enjoy more Calabrian content before I go. LOL. Cheers mate. 🍻
Thank you! There is so much delicious food to discover when you start looking in specific regions of a certain Country. I used to prioritise the Capital cities every time I travelled somewhere, but then I realised this is actually what everyone else does. And so I started enjoying much more "getting lost", going rural, on visiting places that aren't much talked about, to see what they eat there :D Hope you enjoy Calabria if you get the chance to visit!

Oh boy. That "raw sausage" is actually prime cut beef. What is called a tartare in neighbouring France, Albese in Piedmont. Can't you tell a salame from a ground filet? And the tomino is NOT from cow milk, unless is a cheap supermarket product. Finally Ricotta is NOT cheese, does not come from milk but from boiled serum. That is, what is left in the cauldron after you make cheese.
I’m sorry but you are wrong on this one! Veal sausage does exist in Piedmont and it’s the one I tried in the video. It’s also called “salsiccia di Bra”, or Bra Sausage, and it’s typically eaten raw in Piedmont.

Hi Guido, as per menu (which I’ve captured in the video), that is actually raw veal sausage with valerian and grana cheese, not beef tartare.
