Making Redbud Jelly

  • On this episode of Making It Work join Amy in the kitchen as she makes jelly from redbud tree blossoms. You can make jelly in similar fashion from honeysuckle, violets, clover, dandelions, etc. You basically pick the blossoms, rinse them, pour boiling water over them and let them steep/infuse overnight in the fridge. For 3-4 cups of blossoms we used 3-4 cups of boiling water. After it steeped the water was brought to a boil along with 1/4 cup lemon juice. Then 4 1/2 tablespoons of pectin and 3 cups of sugar were added and brought to a hard boil for 1 minute. Then pour into jars and process the jars in boiling water for 10 minutes. Make sure you wipe the rims before you put the lids on! Lol! Let jars sit untouched for 24 hours and make sure they have sealed. Good stuff!!
