VIllagers don't need a door. Plenty of breeder pens are enclosed except for the hole that the baby can get through. All the tutorials I've seen have the spare beds on the same level as the breeding villagers with the drop chute between the breeders and the beds. 3 rooms total. 1st room: breeder villagers (2), often with a food source and a blocked composter (self-sustaining factory of breeding; choose the food they're already using (carrots in your case)). 2nd room: 3-5 beds they can see but cannot reach. 3rd room: the drop-down space below room 1 & 2. The path that connects room 1 & 2 should be 1 wide, 2 tall, and 2 deep (blocks, I mean). A trap door on the top of this pathway (so it's not a full 2 blocks of space) will stop adults without stopping babies. There should be no beds in room 1. No need for beds in room 3 either.
