Peruvian Gold Chicken on the Pit Barrel Cooker

  • In this recipe I'll show you how to make a whole Peruvian Gold Chicken on the Pit Barrel Cooker. The Pit Barrel chicken recipe couldn’t be easier. We’ll split the whole chicken in half and brine it overnight. The next day, apply some chicken seasoning, hang in the Pit Barrel and then finish with Tobago Keys Peruvian Gold Grilling Sauce. This might be the best chicken I've ever eaten!
    Brine Ingredients
    • 1 gallon water
    • 1 cup Kosher salt
    • ½ cup brown sugar
    Chicken Ingredients
    • 1-2 teaspoons olive oil
    • 2 whole chickens
    • 2 tablespoons Runnin Wild Poultry Seasoning, more info here www.armadillop...
    • 6 oz Tobago Keys Peruvian Gold Grilling Sauce, more info here www.armadillop.... This sauce is a great sauce for fish or chicken. Ingredients include Sugar, Yellow Mustard, Water, Apple Cider Vinegar, Light Brown Sugar, Tomato Paste, Worcestershire, Salt, Pepper, Herbs, and Spices.
    Recipe Instructions
    1. Mix the water, Kosher salt and brown sugar in a large pot until dissolved.
    2. Cut the chickens in half, pace in the brine and refrigerate overnight.
    3. The next day remove the chicken from the brine and pat dry with paper towels.
    4. Rub the olive oil over the chicken, then season with the Runnin’ Wild Poultry seasoning.
    5. Insert the Pit Barrel hooks under the breast bone and hang the chicken in a pre-heated Pit Barrel Cooker. I added 4 pieces of Mulberry Wood which provides a sweet, fruit-wood flavored smoke.
    6. Smoke the chicken in the Pit Barrel Cooker for 1 hour, then insert a temperature probe if you want to monitor the temperature. This chicken was at 148 degrees F in 1 hour.
    7. When the chicken reaches 160 degrees F (for this cook it was 1 hour 37 minutes), remove from the Pit Barrel Cooker and glaze with the Tobago Keys Peruvian Gold Grilling Sauce.
    8. Hang the chicken back in the Pit Barrel Cooker until the internal temperature reaches 165 degrees F in the breast. For this cook, the total cook time was 2 hours.
    9. Remove the chicken from the Pit Barrel Cooker and let rest for 10 to 15 minutes.
    10. Serve!

    It’s pronounced “Too Bay Go” as in Trinidad & Tobago. That sauce is the BEST. Wow.

      @@Armadillopepper did you cut chicken in 1/2 then brine, or brine then cut 1/2?

      You can do it either way, but cut them in half first. That way you won't need as big of a pot for the brine.

    Doing a collaboration cook tomorrow to be released Tuesday morning. Decided to go with hanging and smoking a chicken in the WSM pit barrel style. Watched this vid again to get in my head what I want to do. That Peruvian Gold is some good lookin sauce.

    Here We Go Round The Mulberry Bush... Chicken turned out great... Pit Barrel does chicken right.. made a Carolina gold mustard sauce with pretty much the same ingredients... more yellow being mustard is the main ingredient... Thanks!

    Congrats on being a new grandpa! Well I took the plunge and purchased the PBC from a local BBQ store. Hopefully it compliments my Masterbuilt well. I did a dry run last night with no meat, just charcoal, followed the instructions and only lit about 40 briquets in my chimney, etc. My thermpro said it was up to 400 degrees at one point! I will need to play around with it to figure out how to get it around 250-300 degrees. Granted there was no food in there but 400 is WAY too hot. I'm pretty sure I left the coals in the chimney too long, going to shorten the recommended time and maybe close the damper a little bit more. Going to jump in head first this weekend and smoke a brisket flat and a chuck roast (poor man burnt ends), can't wait!

    How long once the coals are lit do you wait before you put the chicken in? When the coals are heating up do you leave the top lid on or off while its heating up?

      Leave the lid off until the fire gets started. Time can really vary, but typically 15 or 20 minutes. Once the fire starts to die back and some coals are asking over the put the lid on.

    Awesome recipe but I would only do a half a cup of kosher salt myself. I followed this recipe and some parts were on the salty side but overall had a great cook.

      Thanks. Did you wipe off the chicken good? I always use 1 cup Kosher salt to 1 gallon water (which is a pretty common brine ratio).

      Yes, but I injected the chicken. That video is here: ua-cam.com/video/pAvFbi7AjMo/v-deo.html. I always brine and/or inject chicken when smoking. In my experience, it makes a big difference.

    Congratulations on the new grandbaby! Have I missed it somewhere? Where can I get one of those Barrel smokers? And what is the hottest sauce that you have. I went to some chicken place that had a contest if you ate all the hot wings then you got the meal free. I asked for a sample to see what it was like but the flavor was so wonderful I could not see why somebody would just gouge themselves.

These are dfinitely super hot: Puckerbutt Carolina Reaper, Hellfire Fear This!, Irazu's Carolina Reaper 70 and Wicked Reaper Carolina Reaper Hot Sauce.     I think the PBC does chicken better than anything else. I don’t use mine for ribs much anymore but it’ll sure cook some yard birds.

      Why dont you use it for ribs? I thought it would have been ideal for ribs. What do you use instead of the pbc for ribs? Asking since I was literally about to place a order tonight for one and the reason why because I liked the idea of hanging ribs.

      +m Day Tsangs oil. It's infused with garlic and onions and is available at most grocery stores where we live. Vegetable or olive oil will work just fine in this application.
