As long as the two in question are in reasonably good shape they should be able to handle this boat easily: this boat is designed for charter work with a single able skipper running everything, so two able people would be easy! Now a couple of geriatrics is a far different scenario than a couple of fit 22 year-olds fresh out of university! For them I'd say no: that's a lot of sail area to hoist, and if anything goes wrong, you're going to need some muscle to get things straightened out: I can probably manhandle a 100lb sail if i need to, but my wife, and certainly my mother, could not. For older people, a yawl or ketch is better as it has the sail area divided up into smaller areas so even a large boat can easily be sailed by older people (this is the case for the UA-cam channel called "Follow the Boat": they did a video specifically on this topic) To each as they are able.

If you look at it (marker 4:44) it could easily be widened by 6 inches without any problems. may only have to move the flex lamp, on the bench seat back rest sill, an inch or so.

Were you able to get least wind resistant keeling? Deepening the hull to a maximum ahead of the mast so that the lateral resistance ahead of the mast is much greater than the stern. This will reduce heeling and increase speed while gaining rudder control in high winds. I certainly hope you are able get to an academic keeling design for such a beautiful boat.
I see a problem 6:18 when you are at sea and sailing your gonna slip of that bed. O wait its a cruising boat, not a sailing boat. So someone planing long voyages its basically worthless.
Just seeing this vessel today "look at all the space to work on the engine" they must be looking at a different view than I saw!! I think the vessel is rather ugly and architecture leaves much to be desired.
You'd get a better functional redundancy and safer bulletproof non-proprietary ocean cruiser bang for your buck at McDonalds. Actually correction, this shit breaks, a Big Mac does not.
