Most Temples use yam instead of round potatoes because it was brought to India by British. Another thing they don't use is tomato which was too brought by the British. But tomato is not used in Dalma. Temples use dates,raw mango,elephant apple, starfruit etc.(any 1 item) to make a tangy sweet dish called khatta. The tadka is done in desi ghee for best taste. One can use any other cooking oil too for tadka. Onions and garlic are not used too and dried red chilies panch phooran is used in tadka. One can use grated coconut and roasted cumin seed,dried red chilies powder to enhance taste. Arua arna( plain white rice) with ghee,dalma and khatta is a typical pure vegetarian meal for any occasion. Someone can add some other curry like mahur,besar,saag to the meal.

Since it's not a roadside stall or cart, they should all wear gloves when serving customers. Both hands and all fingers touch the food, which is highly unhygienic. Not whining but we as a nation should improve when it comes to hygiene and cleanliness.

Please stop using hate words like, "These Odias". For your information, it wasn't Dosa that they were making, that was a Odia rice batter, Urad Dal dish called Chakuli Pitha in Odisha. Pithas in Odisha are made from rice and Urad dal batter, in various combinations and proportions. There are a variety of pithas in Odisha.So please do not think that only you have the monopoly and proprietorship over such delicacies. And Vada or Bara in Odisha tastes much better and crispy than your medu vada. Ever heard of Dhenkanal Bara? Parochial South Indian.
