Vegan Nasi Minyak & Ayam Ros
Serves 4
2 tbsp vegetable oil
1 tbsp vegan margarine
1 cinnamon stick
1 star anise
4 cloves
4 cardamom pods
4 red onions, sliced
4 cloves garlic, sliced
1 pandan leaf, knotted
1 stalk lemongrass, bruised
4 slices of ginger
2 cups basmathi rice, rinsed
3 cups water
1 cup oat milk
2 tsp mushroom seasoning - bit.ly/3qYJ67o
1 tsp salt
6 dried monkey head mushrooms, soaked overnight and squeezed until the water runs clear - bit.ly/35ik247
1 tsp salt
1 tsp turmeric powder
Blend:
5 red onions
5 cloves garlic
1 inch ginger
1 inch galangal
Enough water to blend
3 tbsp oil or more
1 cinnamon stick
1 star anise
4 cloves
4 cardamom pods
2 pandan leaves, knotted
2 stalks lemongrass, bruised
1 yellow onion, sliced
2 tsp mushroom seasoning - bit.ly/3qYJ67o
Salt to taste
2 cups water or more (according to preference)
4 tbsp cili boh or dried chili paste
2 tbsp chili sauce
2 tbsp tomato ketchup
1 cup tinned tomatoes (1/2 a tin)
100ml coconut cream
50g raw cashew nuts, soaked and blended with soaking water

@@TheKampungVegan well now….I have an update for you: I defrosted the seitan and followed your recipe. It turned out so well AND the aromas from both the rice and the seitan were reminiscent of my childhood in Malaysia. But I wasn’t finished yet: I made pandan vegan coconut jelly for dessert! It was IMMENSE. 😀

@@TheKampungVegan re the Coconut jelly …well I just blitzed pandan leaves in some water and then extracted the resulting liquid. I strained it and mixed it with very thick coconut milk and sugar to taste. Agar is not that easy to get over here so I used carrageenan ( which is actually seaweed too) - so the ratio of liquid to gelling agent will depend on what’s being used. I prefer using agar but I actually got a great result - imagine the top layer of Seri Muka but in jelly form. It was wonderful. ❤️🥥
Let's be real, the top layer of Seri Muka is the only layer that counts hahahah! Thanks for your recipe, it sounds delicious ❤️😍 I've never worked with carrageenan before but have it in my pantry, should give it a shot and see how I like it
