Yet again you share your cooking skills with us. I wish everyone would remove the fins and the spikes on the back of the fish like you do. I was taught to remove them also, it makes the fish look more appealing. A+ for you as always

This is a great video. I've always wanted to know how to make this. I just want to know. Is it best to dry the fish after washing and then to season the fish? Only because when putting wet seasoned fish in hot oil, it tends to make the fish start to boil cook? Please tell me what you think?
Wow, I like the way you sliced the fish. How can I get my fish to have a lime flavor all throughout without the pickle sauce? I've tasted some people's fish and it's fried dry but it's like the lime is marinated into the fish skin.
