Don's Cook Nook: Grilled Shrimp Fajitas

- In this video I share my approach to making grilled shrimp "fajitas." I hope you enjoy! Please leave a comment with your feedback :-)
Recipe:
1 lb shrimp, uncooked, thawed, peeled and cleaned
4-5 Peppers (any mix of Bell and Poblano) chopped into medium sized strips
Marinade:
1/3 c olive oil
fresh juice of 1 lime
low sodium Soy Sauce (2-3 tbl)
chili powder (1-2 tbl)
paprika (~2 tsp)
ginger (~1 tsp)
cumin (~1 tsp)
garlic powder (~1 tsp)
freshly grated garlic (2-4 cloves)
red pepper flakes (a few dashes)
Sriracha (~1 tsp)
Salt (1-2 tsp)
Mix all marinade ingredients thoroughly. Coat shrimp with marinade in a plastic bag and let sit in frige for ~30 minutes.
Coat peppers with olive oil and season with salt, pepper, chili powder, and cumin. Arrange peppers in even layer in grill basket and place on grill preheated to medium-high. Cook for ~3-4 minutes per side until peppers begin to char. Remove basket from grill and arrange shrimp in an even layer on top of the peppers. Return to grill and cook shrimp side down for ~2 minutes. Flip and cook for ~1 minute on the other side. Remove from grill and transfer to serving dish. Serve with your favorite warmed tortillas and your favorite cheese, guacamole, and salsa!

We love fajitas, and concur on how easy they are to make on the grill, but we don't like as much spice. The grill basket is a good idea for a gift for Father's Day. Good Job!

Hey Don! Recipe looks amazing, but just thought I'd share a tip for chopping peppers. Rather than chopping off the top root end and then scooping out the seeds, a simpler way is to cut vertically down from the top root, working your way around the pepper, making sure that you leave the seeds/root attached to the top. That way, you can quickly make around 4 cuts (depending on the size of the pepper), and have the seeds/root separated from the colored part of the pepper that much faster.

Looks great. When I make chicken fajitas I use a packet of the Lipton onion dry soup mix for the seasoning. It's really good and easy. I am definitely going to make this tonight! Thanks Don.

Ok...just made this. It was SUBLIME. My grill basket sucks but I found one similar to yours on Amazon so I'll bite the bullet and get it. I'm a little crazy about the vein and I accidentally bought shrimp that were not properly deveined so it took a while to prep, but the taste was really great. Thanks very much!

If you left the shrimp to marinade for longer than 30 minutes, the acid in the lemon juice would start to cook the shrimp. I love fajitas, especially shrimp so thank you for your new take on a delicious classic. :)

Re: deveining shrimp, yes I do usually buy them already deveined. I did pull out a couple of the big looking veins as I was going along. However, I'm pretty sure it's only imperative to devein if you have large shrimp where the vein might add some grittiness. That is not an issue with shrimp this small, in my experience (based in this 1 meal!) and from what I have read.
I've even found it a Walmart. It's worth picking up!

You know you asked Don this question, but I thought I would answer...you can find Sriracha at most grocery stores. (at least in my area). Usually in the Asian section.
Don, try Paul Prudhomme's fajita seasoning. I purchase mine online. I buy it by the large canister so I don't run out. This video made me so hungry!!!
Delightful dinner
I've probably done this recipe a dozen times or more and never had a problem. I got that technique from some major recipe website, fwiw. However I am no food safety expert. I have no training. I'm just a guy who likes to cook :-)
Yummy I want some now but I always devein mine too when I peel them.
I think the best way to cook the tortillas is just letting them sit flattly on the grill dont worry they wont burn it will give it a nice crisp and warm the tortilla a little more properly. Just flip it like every 1 or 2 minutes jntil you see it cook at your desire

Don- FYI. They sell shrimp already de-veined! That's not fun to do yourself. :) Also, did you mean to char the peppers so much, some were a bit overdone no? Overall, it looks amazing!

That look yummy but I too recommend you de-vein the shrimp or you could buy them already prep. Peeled and de-vein.

One question though, I've always been taught to keep could foods away from raw foods, which makes me wonder if its ok to put the raw shrimp on top of the pretty much cooked veges? These look soooo good! I don't have a "mister", as Jen calls you, to grill for me, so I just do them either on my Cuisinart panini machine or my Zojirushi electric grill, but I am positive they would taste better the way you do it. Anyway, the real reason I'm commenting is just to mention that I love to add ground chipotle chili powder instead of regular chili powder. The ground chipotle chili powder adds a wonderful extra flavor and I thought you might be interested to hear about it. I also use it when I make enchiladas.
P.S. You should try Cholula hot sauce. It is my favorite (so much better than tabasco) and, while I love sriracha,there are many things in which I prefer to use Cholula.
gayla gavin One question, what is the brand of microplane you are using? It looks like it does a great job and, sadly, mine is terrible. :)
