literally screamed when I saw the notification for this. you're in for such a treat, this show is genuinely one of the best shows EVER, seriously. It's very complex and brilliantly made.
Hannibal is quite a complicated show, with lots of details, subtext, and symbolisms. It's slow-paced, artsy, and gruesome (some stunning visuals!). It's not for everyone, but it's an amazing piece of cinema if you're smart enough to understand it and willing to enjoy it for what it is. It's simply one of my all-time favorite shows. Yessssss I've been hoping you'd do this show! The amazing thing about Hannibal is that, and this isn't a spoiler, just an observation that even the first episode makes obvious, Hannibal is NOT the ANTAGONIST. He's the PROTAGONIST. Everything happens because Hannibal HAPPENS to everyone else in the story. It's awesome. You mention the framerate. The show actually appears to change framerates throughout, depending on the character perspective and frame of mind. Usually when Will is in an altered frame of mind, it uses speed-ramping and super high contrast to mimic a higher frame rate, similar to how it uses slow-mo to indicate when Will is voluntarily in a heightened state of perception. Just another way that the cinematography is exceptional (and PURPOSEFUL) throughout. Mads. Always amazing. He's the definitive Hannibal to me now. Sorry, Sir Anthony Hopkins. This is one of the greatest shows ever made, imo, and it was an absolute miracle that it managed to stay on network TV for 3 whole seasons. It's glorious, and an insane journey. The show is so very unique. I can not wait for the rest of your reactions!

I really like Hopkins, but Mikkelsen is THE Hannibal for me and he just surfs that line of being likable but uncomfertable at the same time ....and I would eat whatever he gave me. I got the cook book as well from this show and the images are amazing!

The "pilot feel" may also be missing because many people already know the characters. Will Graham is from the book (and movie) Red Dragon, and Hannibal obviously from all the books and movies. So many people would already be familiar with both the characters as well as the plot. So the show kind of assumes you at least know who Hannibal is. They do give some information obviously, but you shouldn't have any doubt that Hannibal is a murderer. And of course, by the end of episode one we know Hannibal killed and ate Cassie Boyles, the girl on the stag's head. While Hannibal doesn't exclusively eat human flesh, you can assume he is eating more people than the show explicitly tells us, in a variety of ways, after all, you can take a lot of things from a human body, like any animal. Up to and including bones for broth and gelatine. If you're interested in behind the scenes stuff, there is a lot of interesting things from interviews and making ofs, to books and blogs. One of the things I really like is the food styling. Janice Poon was the food stylist for Hannibal, and she wrote a book about it, which includes recipes. She also has a blog with a lot of information on how she made certain dishes (for other shows as well), since she obviously can't feed actors actual humans. Don't read the book or blog if you want to avoid spoilers, but maybe something to visit once you're done with the series. There are four books, Red Dragon, Silence of the Lambs, Hannibal, and Hannibal Rising. The first three books take place in chronological order and start with Hannibal already in prison. Hannibal rising is a Hannibal origin story, and only kind of canon, since Harris was more or less forced to write it. The show chronologically takes place after Hannibal Rising and before Red Dragon because they were interested to explore what Hannibal might have been like before he was arrested. The show kind of takes characters, plot elements, and events from the books and mixes them up. So some characters get way more time and attention than in the book, or vice versa, some events happen but in a completely different order, or in a different context, some plot elements are used in new ways etc, but a lot of the events in the show are not in the books at all. The show is basically fanfiction and we love it for that. Well, I do. 😁 So even if you know the books by heart, you won't be able to predict what happens in the show.

Sad this show wasn’t continued because I really liked it. Same with the series Clarice. For some reason that hasn’t returned either.
Later the show will be more intense and fricky.

You mentioned the bathroom set design. This is one of a few direct references to sets in The Shining throughout the show.
