And since wine is only about 12% alcohol, losing only 3% of the whole mass due to evaporation could cut down the alcoholic level 25%. I want to get drunk, not fat.

I wonder if you could top up the wine with uncooked wine so it still has alcohol if you accidently boil. Then you could let the spices simmer more. Oh! What if you had some spiced apple cider then just added the wine at the end? Are there some downsides to doing that?

Gordon Ramsey: Bedtime. Get undressed, nice and fast: Done. Get the bed ready, little seasoning, touch of olive oil, give it a good shake. Nice. Really got to make sure it's airated. Don't want it to be too hot or you'll boil. Pillow fluffed, excellent. Little bit of deodorant, the smell, beautiful. Splash of water on the face, really brings out the freshness of it. Slowly peel back the covers exposing that beautiful soft interior. Slowly slide in, careful not to crease the sheet. Nicely finish it off by covering it back over. Done. Beautiful bed time brilliant and verysimple.
..I like the Ginger, Lemongrass & Roasted Spiced Nuts (..on the side..) However, I'd add the Wine last.. I'd bring the Sugar & Spices to a boil using the fruit juice first.. That's just me

@@Tsunad360 yes, you can top up wine. "Cook" 1/3 of your wine batch to syrup and simmer the remaining 2/3, and then if you need a kick + spiced rum.
