Coconut Biscuits / Biskut Kelapa
A delicious with chewy texture and perfect for festive seasons. Its an old recipe, that my mom usually follow...
Ingredients
2 1/2 cups of all purpose flour
2 cups of fresh coconut grated
200g butter
1/2 cup of icing sugar ( less sweet biscuits)
2 tsp baking powder
2 tsp vanilla essence
2 tbsp of milk (optional)
1 tsp salt
desiccated coconut for topping, optional
Method
Roast the coconut grated till dry using low heat. Keep aside. Separately in a bowl add butter and icing sugar. Use whisk to mix well to form a smooth and creamy mixture. Add the flour and baking powder gradually. Mix using spatula. Add coconut, vanilla essence, salt and milk. Knead well to form a soft dough using hand. Cover with cling wrap and keep it more than 30mins or overnight. Take some dough, flatten them a bit and shape it with dough cutter. Coat them gently with desiccated coconut. Place them in baking tray lined with parchment paper. Bake them in preheated oven at 160°C for 20-30mins or till slightly brown at the edges.
