Of all displayed saambaar recipies perhaps I choose this is no.1, tried with different vegetables liked much advise the originator let him try use with muruganahuli, vaatehuli, amatekayi, mango as souring supplement being my option.
To increase its taste and give it a flavour he could have added hinge or ingu

Fenugreek seeds urid dal and black pepper in little quantity is missing
While grinding what we can see in authentic Udupi style
I think instead of Bengal gram, Urad dal is used in Udupi recipe.. Fenugreek and pepper can be avoided in this recipe.
