    (I used 450ml of homemade almond milk, 40g cane sugar, 1.5 tsp matcha powder and 2 tbsp agar agar flakes)

      Tracy Lyn Turner if you're having trouble finding Jelly Fig Seeds, you might be able to substitute Chia Seeds for it. They react the same with liquids too!

    Goji berries on top, nice finishing touch visually and taste wise. Lovely recipe, will try it. Essentially almond milk with fig seed gelatin and some dates for body. This is a Japanese blancmange!

    could one not use agar powder? I believe it is vegan, not sure if it counts as raw vegan..but would be easier to find (I found some at my whole foods market)

      +fantasticphotos1 You need to bring the mixture to a boil if you used agar. I just wanted to show how to use jelly fig seeds and Raw pudding recipe. so, you could use agar instead of jelly fig seeds of course :)

      +fantasticphotos1 you could use agar, but I'm afraid you will be disappointed because agar has a totally different texture. fig seeds give you that wonderful jelly texture.

    Hi.
    I have been drinking matcha tea for years and would like to think I can call myself a matcha connoisseur.
    I just finished my own taste test of 5 brands of ceremonial grade Japanese organic matcha. I want to share the results of my taste test with everybody.
    I prepared matcha tea in the traditional way using a bamboo matcha whisk (or "chasen" as they say in Japan), one gram of matcha, and the same amount of hot (not boiling) water.
    Here are the results:
    1st = Doctor King - finest ceremonial grade
    2nd = Midori Spring - ceremonial grade
    3rd = Kiss Me Organics - ceremonial grade
    4th = Kenko - ceremonial grade
    5th = Aiya - ceremonial grade
    The color of Doctor King finest ceremonial grade organic Japanese matcha was clearly the best (10/10).
    Kenko and Aiya were the worst (which was a surprise for me).
    The taste of Doctor king was the best - no bitterness at all!
    :)
    P.S.
    For anyone who is new to matcha, there are 2 main grades of matcha: [1] Ceremonial grade [2] Culinary grade
    [1] Ceremonial grade matcha is the right choice for preparing matcha tea. Ceremonial grade matcha has far more L-theanine than culinary grade matcha, which gives you a delightful and unique "calm alertness" without anxiety or palpitations, which you can experience with too much coffee. Matcha tea is low in caffeine - about 30 mg of caffeine per cup.
    On the Dr. Oz show in 2014, Dr. Oz and Chris said that matcha tea is the "Champagne of green teas" that "everyone ought to be drinking" for the "extraordinary health benefits" (fights disease, fat blocker and reduces anxiety)! You can't get a better endorsement than that. Dr Oz. is a Cardiovascular Physician!
    [2] Culinary (cooking) grade matcha is the right choice for cooking up culinary delights like matcha cookies and desserts. It is lower quality and may not taste good if you try and make tea with it.
    A milk frother/handheld electrical whisk can be used if you do not have a bamboo matcha whisk.

      The dates are very sweet and probably add all the sweetness the pudding needs! ^^ It also says in the description box that you can use ''any kind of sweetener'' in case you don't like and/or have any dates.

    I love that you made this with your own almond milk. I hope you saved the almond meal, you can dehydrate it in the oven and bake some bread with it. I used to make my own almond milk because almost every brand was putting carrageenan in it, but now there are lots of brands who are not using that nasty ingredient any longer.       +Sam Sam yes, while the jelly fig seed has some health benefits, like good for your skin and circulation, the chia seed is literally a superfood because of the omega-3 fatty acid content, check this out: ONE ounce of chia seeds has 10 g of fiber, 5 g of alpha-linolenic acid and 18% of the Recommended Dietary Allowance for calcium for adults ages 19 to 50. Now that is a superfood! But you have to hydrate the chia seeds for it to be beneficial, most people add chia seeds dry to their recipes and that can have a reverse effect and be drawing moisture from your body. Fig is a great source of nutrients from the fruit itself than the seeds. Hope this helps.
