Made neipayasam yesterday night . Today ghee has separated from payasam. Where did I go wrong? Is there any method to rectify? Tried heating & stirring already

Why is white sugar added ? Instead can we add jaggery itself for that quantity?
White sugar will enhance the taste. However, you can also prepare using only jaggery

When u say 3 cups jaggery for 1 cup of rice, do you mean 3 cups of liquid jaggery?
