    I first had this at Tenkai yakitori in Chatan, Okinawa. Love making this at home.

      Recommend regular sake, cooking sake has added salt so it doesn’t attract alcohol taxes. Even cheap sake is better is better than cooking sake. Use cooking sake to soak stuff not to cook with.

    Will be making this soon can i use mushrooms as am a vegan can i skip sake as i dont drink alcohol at home i never had japanese food before perfect for my after office meals love your recipes making me hungry Thanks Ramya

      I think you want a complete different dish however, combine apple juice, apple vinegar and water instead of sake. Use a robust mushroom, add them to dry hot pan first to sweat out some of the water, then add the oil to steam fry them then add the sake alternative. If you add raw mushrooms to a liquid it will be taste nasty.
