What I think would be more likely is a story paralleling Ymirs in which the boy gains the founder and we get a quick rundown before he grows old, dies, and passes it on to his offspring. Thereby starting the new story to show more or less how Maria, Rose and Sina's lives had gone.
The purpose for it was to make the watcher believe that this wasn’t the first time that this happened. That Ymir wasn’t the first to get the parasite thing. To emphasize that war won’t end. It will only have brief moments of peace.
