    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on UA-cam.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

    Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

    Hello there Chef Hiro , I have been watching your videos since the amber jack parasite video (back when you had the Nove restaurant logo ) and I would like to thank you so much for making all these videos. Because of you I have fallen in love with the art of sushi making and because of your videos i have learned things I never knew I could do before from making vegetarian sushi, steaming cooking blue crabs and other shell fish , and filleting huge fish and making nigiri out of the fish. All thanks to your calm , detailed yet easy to understand explanation of every recipe that you make is what made me love watching your videos and attempting them.     Caught my first bluefin last summer. We dressed the fish on the trip back to the dock and had some FRESH sushi. The Toro.....OMG...to die for.

      Scroll back through the videos. His knives all come from Knifemerchant in CA and there are several videos showing them visiting the warehouse and explaining what his knives are. All the single bevels are from the Minonokuni line and the yanagiba is in blue steel. Not sure what steel his deba is. I think his gyuto is Kikuichi and it is stainless.

      Personally, I wouldn't have. I do like truffle, but truffle oil tends to take over the aroma and flavor of anything you put it on. I would have kept the shaved black truffle and left the oil off to let the natural flavor of the toro shine, even though I'm more of a Chu-toro guy myself than an O-toro one.
