I try to buy bulk spices just for ones I used so much of the time which are faviort then buy small size for the many others I use sometimes. I love my spices just like you. Glad to see another person who loves her spices as much as I do. Ox love the videos.
Noreen, I've been watching your video's for the past year or so and I am thankful for your knowledge and instruction. I've been canning (myself) for about the same time. When I was a youngster (many, many years ago) my mama would grab me up at harvest and MAKE me help her with the canning (which I hated). Now it brings back such great memories and peace when I can. You have made this happen … Thank you so much. My daughter is so crazy about what I produce that she convinced me to start a Facebook page (which I've done) about my wares. I've never canned anything before, but I got all the ingredients today for the pickling spice, and 4 lg. wide mouth Ball jars w/lids. I am all set now to follow your recipe for refrigerator pickles! Have you heard of new pickles? They are not very sour, I don't think. Thanks...all your recipes sound delicious! xo

Speaking of spices. I was wondering if you had tried the spice that is the spicy garlic blend? I love that spice. The other spies is the roasted garlic and herb which comes in a grinder or mine did. Those are two of my favorite spices out of all the others I have which are a lot. Thanks for the video on pickling spice. Love you have a good week.

Please have a look at my seasoning blend playlist. I have done lots of salt free blends. Additionally you can always leave the salt out of those that have it.
Another question: I followed the complete recipe (except for the peppers). When I finished I put it in a quart jar (like in the video). The quart jar was (slightly) less than half full. However when I look at the accompanying video (for refrigerator half-sour pickles) the spices-jar that is shown is nearly completely full. Did I do something wrong? Or was the jar in the pickle-recipe video from a larger batch of pickle-spice? (In any case, thanks. I have four jars of the half-sours -one of spears, and three of slices- cooling down on the counter and waiting to go in the ‘fridge. I’m going to give them a week before I try them, but I can’t wait.)
Noreen thank you for showing this mix. It will help many NEW CANERS.. NOREEN for my family no cloves, cinnamon sticks & allspice. I like red pepper flakes. I do not like the the warm pie spices in my pickle mix.. Thanks
But commercial pickle spice has those warm spices. So if you are used to them it may be missing something. But I understand leaving them out if you don’t like them.

Question about the amount of cinnamon: In the video you say to crush “a half-dozen 3in sticks”... ...but on the page you link-to in the description it says “2 sticks”. This sounds like a big difference so I wanted to double-check. (Thanks)
Agree, mostly: the hot peppers I would leave out, cloves and cinnamon too. Not sure about the dried garlic - fresh be better. Also no to celery seed. Bay leaf only if you can't find Oak, grape leaves. Whole Allspice, just the right amount, is key! The right amount of salt in the brine is also key. Don't over-spice. Tiny amounts of spice and salt, fermentation and cucumber, along with spring water makes the best, most memorable pickles.

No, I have never made my own pastrami. I have made my own corned beef and this is what I have used in the past. Since pastrami is nothing more than smoked corned beef, I think it would be nice.
It works for me on all devices. If you are using a phone or tablet and trying to access the PDF you will need to have the Adobe Acrobat app downloaded first.
I do not know what happened to pickling spices but they do not give pickles that taste that I grew up eating and the pickles that we have made for yrs. the taste seems to be Indian, or Pakistan taste to them, but not like the homemade pickles I like. This is great, so that we can make our own spice bags. I read something called fenel greek on the package we bought, and never heard of that in pickling spices before, maybe this is were the strange taste is coming from.
Three years later, we’re still making this blend! Thanks Noreen for another staple!

I don’t usually buy premade blends. Save a few tried and true favorites. I make all others

The written recipe has a misprint. This is for the big batch recipe and you should use the bigger amount.

If you use pickling spice to pickle eggs then yes. I do not pickle eggs.
