I recommend buying lamb chops. That way, you won't have to cook such a big piece of meat on a small surface. You could either cut the chops off the bone or leave them on. If you continue buying shanks, then make sure they are thawed completely prior to cooking and cut it off the bone so they will cook evenly.
Tip for lamb shanks - they’re amazing when braised ( hence the wine recommendation). You don’t need wine though, beef stock with sauteed veggies can do the trick. Only thing - you need at least 2-3 hours to do a decent braise. As others have said, lamb chops are a more accessible choice for limited kitchens.

Grab cell phone, wallet grab laptop and charger, 4:35 turn heater on in truck, plug in laptop 4:40 run in grab 2 honey buns 4:45 drink coffee! release a-b clutch out and rolling! Alex, this is my usual M, W, F morning start! I'll hook up to my trailer at about 5:15 am in Raeford North Carolina and run to Dillon South Carolina. I get there around 6:15 - 6:25 usually, park and wait for them at 7 am to open and by 8 am be on my way back (empty) 9:30 am drop off paperwork, 9:45 am deadhead for Raliegh. 11:30-1145 swap out trailer, 12:00 pm deadhead back to Raeford. I have to say Alex neither of us drinks alcohol, but I drink coffee, Coke, Pepsi, and Mountain Dew! Today I'll be turning in my truck keys, been 3 great years with my boss, I was his most reliable driver. He's driving me to Georgia I'll be there on Sunday hope to meet you soon Alex. John
It’s good to see someone living over the road eating good and having a clean and organized space. I worked over the road building skate parks and bike tracks and saw a lot of guys (and worked with one) that had a terrible diet and didn’t really clean up his hotel rooms that often. His diet basically consisted of microwaved hotdogs and a bottle of vodka every night while his roommate ate over with myself and my roommate. I had an electric camping grill and we would go out and go fishing for fresh fried fish with mini telescoping rods and reels and grilled all types of vegetables and meats. He was a nice guy but it was really taking a toll on his mind and body since he was an older guy. I always invited him over to eat but he only wanted to come over and eat when he was stoned and had the munchies. This was only like 3 years ago and now I’ve heard that he’s got some pretty worrying health issues from all of that.

Run in and shower and get back on the road! I just don't want California runs, I'm happy with N-S or E-W oh and I still have Ralph the (stuffed) lobster for you! I can't wait to finally meet you bro!
If you want to do tougher cuts of meat like shanks etc, get one of those small crockpots that lock so you can secure it while driving and it can cook low and slow. I've done this on long trips in my van.

What really sucks this thing is actually following my route back home. There were reports of one that really screwed up a small town just outside South Carolina. Do like I do pull over, because a semi can be replaced but you can't be my motto!
A tip for next time, when your cooking large meats make a slit in the meat and put a pot or cap over it ,so the heat can reach the middle of the meat. Great video! Keep ‘em coming 🔥
Alex, if I may you some advice here, my friend? if lamb is on the menu, I think you're cooking set up would do better with loin chops. they are smaller and great to grill. The shanks you are using are best when braised.

Looked pretty good man❗️ Maybe you prefer it this way but I would recommend salt n pepper that bish up before it goes on the grill! Then after it’s seasoned with everything you like use your fingers and push all the seasoning into the meat. Then throw it on the grill. The veggies are a must stay safe brotha.

Im a truck driver myself . I always cook outside of the truck . Because it can cause a mess . The windshield will be greasy it will affect your driving .

It's great though you can eat better like this on the road. I always tried to stick to microwaveable food and paper plates and plastic utensils.

We're just leaving Charolette North Carolina to Wilmington North Carolina, then to Raeford. I got my stuff packed up and we're leaving for Georgia! That food sounds good. I got some doordash "steak" from a bar and grill last night parked at my Memphis terminal. First time ordering steak but I was trying to get some real food since I don't cook in the truck. Meh it was uh, well something... then woke up to a tornado watch and heavy rain trying to drown me. Pro tip, in the camping section of walmart they have a bucket lid that is a toilet seat. Get the seat, 2 buckets and some 8gal trash bags and youre set. Second bucket is for the outside to hold poo bags until you can properly throw them away.

When you cook with wine, the alcohol content is quickly burned off. You will not be consuming alcohol when you eat what you cook using wine.
