He is perhaps trying to talk about a symbiotic community of bacteria and yeast, which is involved in some foods like kimchi, but bacteria do not "make" yeast. Some strains of bacteria and yeast can work together to metabolize and ferment some substrates/foods.

I'm not entirely sure, but I think both of them are done by various bacteria (not yeast). Personally I prefer the cucumber with lactic acid pickling. But still the best pickled food of all is the good Bavarian Sauerkraut, i.e. pickled cabbage.

Mid-day is 12pm because that's the highest point of the sun in the sky from horizon to horizon, after that it is a slow descent down to evening/night.
just fyi it ferments because of the sugar in it. thats why fruit is used to make alcohol as it has a lot of sugar.
