- Ginger Palm jaggery is prepared from the extracted sap from the palm. The sap from the palm sapling is extracted skillfully. The sap that oozes from the sapling is collected in earthen pots. The pots are coated with slaked lime to ensure that the sap does not ferment. Most of this activity takes place between January and May.
This unfermented juice is a great summer drink; locals call it padaneer. In smaller towns in Southern Tamil Nadu, it's not uncommon to see this drink served on palm leaves that are expertly folded into mugs. The unfermented juice is filtered and then boiled till it bubbles in iron vats. The boiled juice is then mixed with dried ginger powder and cardamom to get the flavor. Once it's cooled, it is poured into molds - most farms use coconut shells for the molds. Once it is 'set' in these molds, the ginger karupatti is ready for consumption.
Made from the freshly concentrated product of cane sugar and date palm tree, Karupatti (Palm ginger Jaggery) is a treat to the taste buds. The process of making palm jaggery does not involve the use of any chemical agents, hence all the natural minerals are retained as no preservatives are added.
