My Best Tender Meatballs

- How I make my favorite meatballs.
Ingredients:
3 slices of bread
2 eggs
1 and 1/2 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon table salt
1/2 teaspoon pepper
2 garlic cloves
1/2 cup Locatelli Pecorino
1 pound of ground beef
Mix all ingredients together except the ground beef. Then mix in the ground beef and form into 4 or 5 large meatballs.
Cover the meatballs with sauce, at least 3/4 of the way up on the meatballs.
Bake 275F for 3 or 4 hours covered.
Sauce:
I used 3 pounds of very ripe tomatoes. I peeled and chopped the tomatoes.
3/4 to 1 cup onion
1 clove garlic
3 Tablespoons olive oil
6 ounces tomato paste
1 cup water
1 teaspoon sugar
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 1/2 teaspoons dried oregano leaves
1 bay leaf
Sauté your onions with the olive oil in a pot until translucent.
Add your chopped garlic and sauté for a minute.
Add the rest of ingredients and simmer for 40 minutes.

I made them w/ my own spicy marinara. They were great and truly tender. One mistake by me. I added too much sauce to a shallow baking dish and it bubbled over. No problem. The little bit of extra cleanup was worth it for the extremely tender result. Keep cooking and sharing. I am a fan.Thank you

Michael how about using some fresh Italian parsley in the meatballs as well as the sauce..and lastly a splash of a good red wine in the sauce..if I made the sauce yesterday or today would let it simmer for 3 to 4 hrs..oh yes I would use fresh herbs too.

I've been watching some vegan "meat" recipes lately because I can't get any decent ground beef.
I think pork breakfast sausage is much better to use, way more flavor.

Costco has grass fed beef that’s frozen and in shape of burger patty’s. The price per pound is really good and you can thaw it and reshape it to use however you like. The quality and price can’t be beat in my opinion.

I could have sworn that I could smell that sauce! :D It looks marvelous and I love the use of mashed potatoes instead of the same old noodle dish. Yum. All my life I have NEVER cooked meatballs without browning them first, it's so cool that you didn't have to dirty another pan & mess up your stove to do that; they were clearly cooked through and did really look tender. Yum. Guess I should have brought my own fork, eh? LOL. Another excellent video. Your photography is always crisp and clear with excellent angles so that it can be followed along plus all the ingredients in the show notes to make it easy to print out. Thanks Michael.
I saw a Canadian Cooking Show where they only showed making meatballs and then baking them for 4 hours. Suppose to be the best meatballs. Then that coupled with seeing Italian women cook offs with some browning the meatballs and some not. So I had to try it with my own recipe and it works out great. There is enough sauce for pasta if preferred, but a nice change is whipped potatoes or other things. Thank you Liz!
