    Absolutely love fried zucchini and yellow squash sautéed with onions and garlic for a side dish. Also love deep fried zucchini in tempura batter! Love stuffed zucchini baked in the oven! I don’t know why I never thought to freeze zucchini slices! Thank you Ms Lori and Constance for reminding me to freeze zucchini this way! Can’t wait to get some from our local farms this year! I don’t grow it anymore as people in my apartment complex kept stealing it from my patio. Hope to have a house next year in the country so I can grow it in bunches!

    🤤 love fried squash. Love watching how you preserve your harvest. Always brings back awesome memories of when I was a little girl helping my mother, grandmother and Aunts preserve what ever we got from the gardens and friends. 🤗💓💕💞

    I spray mine with a bit of olive oil spray before breading them. It is wonderful. Blanching also helps to eliminate any bacteria that might be on the vegetable. Enjoy the vids. Keep them coming.

    Had so much Zucchini one year I couldn’t give it all away. So I started making up recipes - especially for those huge ones I didn’t pick in time. Would cut in half-scoop out the pulp and mix with Italian seasoned bread crumbs-add a tin of smoked oysters cut up- sprinkle Parmesan cheese on top and bake until tinder- yum

    I like to shred my big squash - after removing the seeds - and cooking up like taco meat. Season like you would a chicken or beef taco, and if you’re fancy garnish with sunflower seeds.

    I love to blanch and freeze slices and then make creamed squash. Cook slices by steaming or boiling until almost done, pour out water, add heavy cream and butter, s&p, heat through. Heavenly and low carb.

    I have 3 kinds of squash growing. Some plants don’t grow in such a way to stake or trellis them. My spaghetti squash and winter squash are growing very nicely on the trellis. I am just now getting squash bugs. We have been picking them off but I know how determined they are and they breed by the hundreds.

    Good evening Constance. I saw Miss Lori's vid too the other day...love the fried zucchini. My zucchini isn't growing this year, and I truly didn't know about the yellow zuc's - found them at a local farm market...going to have to order those seeds for next year! That stuff is fab!!! Also, you mentioned I one of your doing vids about spicy oregano, where did you find that at ( if I may ask)?

      It was either from Sharum's in Fort Smith, or the Ace in Greenwood. They both had a good variety of herbs. BUT I will say, it was labeled "spicy oregano" but it doesn't taste spicy at all.

    It won't stop raining here in MN. We had 6 in between Thurs night and Saturday. And it is rainy most days, and cool. My garden is not happy.

    I'm going to seed another couple zucchini plants. I believe squash bugs don't stay around all summer. I hope for fall crop.

    Hi Constance. Last few yrs have been horrible squash yrs..This yr has been awesome. I have healthy spagetti squash, yellow squash and zuch. Im canning your zuchini bread jam tomorrow.. Neighbor gave me 3 baskets of plums. Im making Being a farm girls Asain plum sauce...so yummy. cant wait to make your zuch bread jam tomorrow.

    I saw someone use medical wrap stuff, the name escapes me, but it's kind if stretchy and clogs to.its self. To keep those bugs off. MS. Lri made fried squash fritters. They looked very.good.

    What kind of salt do you use? I thought, they were all different? But, after reading about all the different salts, what I find is the best old fashioned iodine salt. Am I right, or did I read wrong?
