I think since I'm just used to the standard thick noodles you'd normally find in miso ramen I have trouble thinking of any other type of noodle. But I'm sure they go just fine with it!
Absolutely love this video. As a gluten-intolerant individual and Naruto fan it seemed like an impossible dream to taste authentic Japanese ramen. I am definitely going to put this into my itinerary when I visit Japan. Thank you so much for promoting this 2nd GF ramen shop. I kept seeing only Soranoiro Nippon in Tokyo being touted as the GF ramen place to go.
Hey, I love your videos! They're a nice length and keep pace very well. I do reckon they can sometimes benefit from mixing your audio a little lower so it doesn't click or distort. I hope to see loads more from you! These bowls of ramen are positively delish!
I may have to go back to recording audio separately (right now it's not a direct audio jack, but there's an adapter in between for when I record). This might be leading to distortions! Always seems to happen with the intro too, haha. Maybe should lower the level when you editing, as you mentioned 😃. Thanks for watching and so glad you're enjoying the videos!

Miso ramen is my favorite in general. I'd love to try the vegan version. It seems to go against convention to broil the miso. When you make miso soup they always say not to boil it after adding the miso paste because it gets bitter (I think?). Anyway, I enjoyed listening to you as I snacked on bacon this morning.

Miso soup is much more delicate so that definitely makes sense. Miso ramen on the other hand is much heavier and in Sapporo style, the miso is normally stir-fried with the veggies to begin with (or even broiling in this case). I think you indeed have to be careful with doing it for too long and burning the miso - this will make it bitter and really transform the flavor. However, there's even a ramen shop that does burnt miso ramen! Def not your typical miso ramen flavor.

It made me sad seeing so few customers for such a great shop. It always impresses me just how much most places in Japan are try very hard to provide great product and service to their customers.

Me and my brother found this place when we were in Tokyo for 48 hours. We were wandering around Shibuya and we didn't know where to eat but we knew we wanted Ramen and we found this place easily. Ramen was great.
Oh, the smokey noodles seems like a lot of work for one chef during peak hours! I can imagine the flavor profile!!! Wow! The gluten free noodles, are they becoming more popular? Is it by choice or necessity? Do they have a different toothe feel vs standard ramen noodles? A lit of hard work for the chef to do but good for him! I hope he will thrive again once we get past corona!!! 👍🏿😀
The big woks that miso ramen shops use do take up a lot of space and it's a lot of work, esp during peak hours! Gluten free noodles aren't normally available anywhere - I think for him it was more about offering this option! They do have a different tooth feel - they're not as springy as ramen noodles and have an earthy flavor. He will indeed survive and thrive 😊

It’s interesting to have gluten free noodles with a shoyu broth because shoyu is high in gluten (which is why folks who are gluten free use tamari vs shoyu / traditional soy sauce). Though if someone is strict celiac / gluten free, they could have the gluten free noodles with the miso broth or Shio maybe?
The shoyu they're using is gluten free - I don't think this has changed since I last visited. Otherwise, yes, the shio or miso ramen be the way to go! Thanks for watching.

Definitely the miso ramen compared to the vegan shoyu. However the vegan miso also looked tasty. I am surprised how Japan is late to the game when it comes to vegan cuisine.
They're very late, but better late than never! With inbound tourism really taking off up until recently, vegan cuisine became more of a thing. It's interesting now, as locals are starting to eat more vegan food too.

They do have a healthy taste to them, but they go well with the soy sauce broth!

In Shibuya away from the crowds there are some hidden gems too. This miso ramen shop was always a late night favorite for me!
