I am using BBB Hardwear as a messenger in Paris. I normally use them with Shimano MT-34 shoes and only a pair of normal running socks. I have used them up to -2 degrees for 8 hours straight and my feet have felt warm and dry all day long. Normally when I get them out the outer part of my shoe is wet from the condensed transpiration, but my socks are mostly dry.
On very rainy days I get the lower front part of the feet wet, which I thing is water comming from the sole, from the cleat holes. On those days now I use a pair of sealskinz waterproof socks, together with the Shimano MT-34 shoes and BBB Hardwear overshoes and it works like a charm.

I have those pearl izumi elite and at -5C I get cold feet after 15 min.
After half a season of commuting and walking around they were starting to get worn out so I bought the Shimano MW7 Gore-Tex MTB Winter Boots.
They are comfortable up to -10C (-20C with better soles and thick merino socks) and keep my feet dry and warm in freezing rain/snow/slush conditions.

I use Pearl Izumi PRO AmFib WxB with kevlar bottoms, when it's brutally cold. They work very well.

I use the shimano s3000X npu+ overshoes and i find them really good.
But I've only tested them in -5°Celsius and on my roadbike so I don't know how they performe when riding on muddy trails.
Rain was absolutly no problem for me.
And they were not so costly imo just 35€ in my local store.
Greeting from belgium and keep up the good work Shai!

    Great video as always
Gloves - wear your goretex ski gloves with merino liners
Shoe covers - add layers as necessary. Foil, toe covers, over socks, overshoes. All of them together at 0C, below that just stay in side. Or buy the winter boots if you are really keen. De feet woolie bookie, my favourite socks

Just get a pair of winter shoes. The cost is comparable to the shoe covers' that are worth to buy. But the ride (or trip) quality is much higher.
On a budget side, use plastic kitchen wrap (Saran Wrap) in case if you got wind proof shoe (or toe) cover and ride in the rain.

Funny I got some overshoes 2 weeks ago but I just tried them today. I can stand the cold wheather pretty well so I don’t even use overshoes until temperatures start to go negative. I got the first Pearl Izumi model because I’m pretty loyal to the brand because they always fit me well while brands like endura tend to be too large for myself. I am not a big fan of the way the overshoes attach to the shoe because I have keo cleats that are quite massive compared to your speedplay mtb. Mavic would have been a smarter choice for me I think. SPD-SL would be even more annoying. For this reason I think my overshoes will probably stay there for the whole winter. Another thing I notice is that the pedals are already rubbing against the stitches (don’t know if that’s the right word for this, I’m meaning the points on the front where two parts are sewed together) but maybe that’s because I’m not particularly gifted at clipping in, I tend to track stand a lot at traffic lights to avoid having to clip out.

Most of those are overpriced for what you get. It doesn't really make sense. For that kind of price, you can buy a good winter jacket.

They are all new with tags. Have you ever used them? If not, I wouldn't. call this a review.
