Gelatine starts to set up in refrigerator, not at room temperature, so you can try to add gelatine mix into the cream cheese mix. No, here Nutella doesn't make that kind of spread, but we have Pan Di Stelle spread that is a hazelnut spread with chocolate cookies chunks in it. Pan di Stelle in Italy are popular chocolate cookies.

What is the purpose of the gelatin in the filling as I have come across a similar recipe that' uses only cream cheese,biscoff spread and whipped cream without any gelatin being added
Mostly if you live in a hot climate and you don’t use gelatin, the cake doesn’t keep its shape when you remove it from the fridge and its texture becomes spoonable quickly. Thanks to gelatin, the cake will keep its shape and texture stable.

You have to store it in refrigerator for up to 5 days, not at room temperature! It can stay at room temperature just for very few hours (it depends on your climate: in a very hot climate, less than 1 hour).
