They're really cool and terrifying precisely because of the first encounter without knowing anything. Well, since you've already spoiled on them, they are indeed "invulnerable" - until they're either parried or stance-broken. My guess here is that something wonky is happening when they're set to fight other enemies, removing or partially glitching their invulnerability.
