      Yep pithy is a word. My mom would use that especially when we had watermelon. It is like Travis described, a spongy texture not very good eating.

      Easiest way I've found to cook winter squash is to poke holes in it to vent & just pretend it's a great big sweet potato. Bake it until it's nice & soft and sweating just a bit. Then let it sit a while to cool, cut it up, and serve. Mmmm...yummy.

      @@LacyO86 I find it easiest to just cut it in half length-wise, season, then roast in cut-side up the oven until it's soft and scoop able. Here is a video I found on how to make the ravioli dish, a classic Italian recipe :) I don't even use the balsamic or amaretto cookies, and it turns out delicious with just the squash, parmesan, butter and sage. ua-cam.com/video/I2dULGrHbuQ/v-deo.html

    Amazing winter squash haul!
    Last year I figured out what to do with all my pattypan (summer squash) and buttercup (winter squash). I peeled and cut them into a fine dice.
    Coat in taco seasoning.
    Grease a casserole with olive oil, and add the seasoned squash and about 12oz of cooked or canned black beans. Roast at 400, turning once, until lightly browned.
    Serve as the filling for Squacos!

      Amen! My garden was prolific in 2020. We shared the excess with several families who were hard-hit during the pandemic. They were glad to get the food and you are correct - sharing felt good! Kate

    Brooklyn is a hoot! Her comment about those pumpkins and Hobby Lobby!! Ha! Abram is even more adorable with his front teeth missing! I hope the Tooth Fairy was generous! My great grandmother had saved seeds from Cushaws that my Daddy ended up with and planted probably 30 years ago and none of us knew a thing about them other than she said they made good pie! He had a good yield and we did make pie! I haven’t thought about those in years and wonder if there are more of her seeds in his shop... may have to go digging! Truly an heirloom!

    I have been growing in raised beds for a few years and I live it. One of the best tips I can give you is to put down a good thick layer of cardboard then set your little raised beds on top, this keeps grass and weeds from growing up through them. I used mushroom compost this year and love it. Hope this helps you, thanks for all the great videos.

    Jess wanted to plant ginger. When we researched it, most said they take about 10 months, so we started indoors about November. We put them in the gardens, in different areas, after it got warm. It looks like the ones that get afternoon shade are doing the best. I'll leave them until the weather starts to cool. They can't handle freezes

    My favorite way to eat winter squash is a mix of roasted 3/4 inch squares of squash, and chopped chard, onions, and ground chicken, which I saute while the squash is cooking.. I flavor the squash with olive oil and salt and pepper, and add a little sage to the mix when I add the chicken. Yummy!

    Great harvest and I pray God will heal your back without any surgery. I've had 2 surgeries and I still have problems. I would definitely buy a couple of those pumpkins off you if you were a few miles closer.

    We have always called the peppercini peppers sissy peppers because they really didn't have any heat at all. Don't toss them. Chill and enjoy on your salads! Love, LOVE seeing more of Brooklyn!

    I remember harvesting tobacco in South Georgia summers. 95 degrees with 90-95% humidity. I like fresh, non-mature buttercup or kabocha squash before the skin gets hard. VERY buttery.

    I bought 3 -3ft.fire rings from Menards for $35 a piece. They wanted $80 for one "raised bed" on the garden websites.I grow my mint, balms and ground cherries in them.❤👍

    Wow, what a nice looking harvest. I have some south Anna Butternut that I will probably try to grow this fall I’m thinking. I have some turmeric and ginger growing in tubs as well. I actually just harvested my ginger and made honey ginger candies with it. So you should do fine with the ginger it took about 8 to 9 months for mine .. now just prepping for the tropical storm/hurricane. But not too much growing down here at this time except for mangoes and avocados

    I talked with a pumpkin grower in South Louisiana, S of New Orleans, who said his pale orange pumpkins tasted so good because he grew cushaw in the next field.

    filling the planters. look for a soil/compost company. I am in Sonoma CA and we have a materials yard and I buy compost/mix for $42/yd. (27 cu. ft.) at the garden store you pay (here) up to $14 for a 2 cu ft bag. or almost $180/ cu yd.

    All of my raised beds are those fire rings this year! They work great...onions, carrots, flowers, potatoes, peppers...the "fire ring plants" are growing and producing way better / faster than the in ground and 5 gallon bucket gardens. No weed problems / competition and soil / nutrient control, I guess.

    Yeah I liked that comment you made too about you and your cat not picking any squash, but we all know yoy would if you could! Brooklyn and the family are doing a great job! Hate that your pepperocinis didn't work out the way you wanted. I hope you do show another or section on those and how they turn out. Thanks for introducing poor homestead. He's got alot of useful ideas I can use. I like to repurpose alot of stuff from around our homestead or picking up stuff. And he's from my neck of the woods! Louisiana!     Good size for Jerusalem artichokes aka sunchokes beautiful flowers and plentiful tubers needs to be contained. I actually like to ferment mine and slice them into salads. Have you thought about growing cucamelons or pineapple ground cherries? Would be fun for the kids its like a easter egg hunt

    My back is shot. Arthritis has taking a toll on it, so bending and me are no longer friends. I now use tall garden beds that I got from Epic Gardens. They're 30" tall and can be filled 1/2 way with tree limbs and such, so aren't terribly pricey to fill. Added bonus to not needing to bend is bunnies leave my plants alone. PS. I'd keep planting a plant or 2 of those little squashes just for decorating purposes.(so cute) Hope you heal not only quickly but that you heal well too.

      Most of these pumpkins have a pretty hard skin. We'll get them on cucumbers and squash, but not much on pumpkins.

    My cushaw squash has a longer neck and some are bent. They are green then Tanish orange. Spanish folks love it in soups and with black or red beans. I bake them scoop them and make pie or other baked goods or just slice them and fry it up with onions. Do you like the flavor of cushaw, speckle hound or Seminole better?

      This was our first time growing speckled hound, so we shall see. The Seminole is a good producer and is very disease-resistant, but I don't think it's the best tasting pumpkin. I prefer Cushaw over it.

    Good timing on the raised beds. I'm about to get a few 55 gallon barrels to make and charge biochar. But I was wondering how they might work, cut in half as raised/container beds.

      That should work, as long as you do something so the edges aren't too sharp after cutting -- or just put the cut edge facing the ground.

    Travis you mentioned before that your garden patches used to be planted pines. I’m thinking about expanding my garden space, and would need to take out some yellow pines to do that. Did y’all just use a chainsaw or did you have them bulldozed etc.? How did you deal with the stumps and the roots?

      We used a tractor with a front-end loader to uproot the entire tree. Then we let the rain knock the dirt off the roots, I stacked them in a massive pile, waited a few weeks for them to dry and burned them. I wouldn't just cut them at the base of the ground. Need to get those roots outta there. After stacking the trees, we used a harrow to chop any of the remaining root debris. Took a little while to get it nice and clean, but it's worth it.

      I would have just put them in mason jars in the fridge, along with some brine in the jar to keep them wet.

    Many times I'm asked why did I grow so much. It's because it's always better to have too many than not enough. At the worst extras can go in the compost pile and feed the garden the next year. 👍

    I think at this point Brooklyn is like, “stop growing anything right now”. Lol 😂 You need to take up reading or crocheting bahaha I love growing stuff too so I get it. I also have had some long term illnesses so I get having to watch and not get your hands dirty. It drives you nuts. Hopefully you’ll be better soon.

      @@LazyDogFarm oh I totally get it. I love to plant and garden. All the way to canning and preserving. I was teasing you because I know this has to be a difficult time for you. Trying to lighten the load with humor. I broke my back several years ago and it was so hard to watch everyone function around me. It will get better and you will be planting, growing, and harvesting soon. God bless you and your family! I think an herb garden will be cool in the tanks. I have ginger, basil, thyme, and lavender growing right now in a raised bed. Look up potager gardens. That may be something lighter you can do closer to home and still keep your hands in the soil. It’s what our southern grandmas called their kitchen garden. Happy gardening.

    What a fun video. I have so many pumpkin seeds to still try out. That being said, take a jar of pepperocini & dump it over a chuck roast in the crock pot. Pepperoncini is generally mild in heat.
    Add a few garlic choices, let it cook on low. It's fantastic...even my small kids would eat it.

      For some reason we don't have vine borers that bad. We do get squash bugs, especially when things get hot in the summer.

    Those fire rings look great, especially for spready, invasive types like mints, horseradish and even rhubarb. Wish I had a half dozen or so to stick into the nooks and corners. Storing the squash in the "cool" of the barn sounds like a relative term in your part of the country. Got me a nice digital postal scale for the tomato trials coming up including the Red Snappers just coming into flower. That 28 ounce rascal of yours will be a tough target to beat, so I'll be needing to bear down.

      Yes, "cool" is very relative. Not necessarily cool in terms of the inside of the house, but much cooler than sitting in the sun. Good luck with growing that monster Red Snapper.

      Bt or Spinosad will kill the larvae, but you've be pretty frequent with the applications (1x week). Once they get inside the fruit, they can't be killed. If you know you're going to have problems, start spraying early in the life. We get them on cukes and summer squash, but usually don't have issues with them on our winter squash.

      That's the "least spiciest" variety that I'm aware. I also like Tatsoi, but it has a little more kick. That would be a great video to do in the fall.

    Those butternuts...cut them in half, top to bottom...scoop out the gunk..place all halves on an oven tray spritz with oil, salt, pepper ...some like sugar( which will caramelize in the oven) and put into your std. 350'f 180'c oven for usual roast time..like potatoes.
    Eat them by scooping straight out the skin shell...easypeasy. well that's how we do it in africa😎🦏🇿🇦😃

    Lucky you..ive ordered ginger tumeric horseradish n I can't get it...i looked for comfrey also...anyway I got 1 tiny little tumeric and have babied it but it likes being in the sun ..im in florida n it's HOT it's loving the sun...yes put them in the special rings.if they like where they grow they spread😁

    This year I'm growing 'Calabaza de Castilla' pumpkin - 1st time to try. Now I wish I'd grown some other varieties after seeing yours. Getting ready to order fall/winter seed. Really mostly wanting Chinese Broccoli. Brooklyn's funny (pecan pie reference). Try fermenting some of the kabocha - thinly slice on mandolin with skin, add some ginger and jalapeno or serrano (just don't ferment too long as you want to keep crunchy - test at 5 days). Note that some kabocha do better than others when fermented, with another favorite being Red Kuri. Don't overferment as they'll turn into something your kids left in a diaper. Pith is the white stuff in a citrus. I grow my ginger and turmeric in ~7 to ~10 gallon pots and keep them in the shade of the citrus trees. Turmeric blooms can be amazing.

    Is there much of a difference between buttercup and kabocha? Buttercup seeds are easy to find here, kabocha not so much.

      It's very similar. They're the same species. I would almost consider them the same thing, just different shapes and colors.

      @@LazyDogFarm So all cucurbita maxima taste pretty similar? My first experience with growing squash is the butternut I sowed 4 weeks ago, so I'm not really sure what the range of taste is like in squashes.

      @@Lochness19 There are some differences among C. maxima. Those giant pumpkins we grew would probably taste a bit different than the kabocha. But the buttercup and kabocha are pretty similar. Winter squash are fun to experiment and try different varieties.

    You sure did have a haul!! Sometimes them pepperocini peppers aren’t very hot for some reason, we make pie out of cushaw just like pumpkin pie. We take our pumpkins and cushaw cut them in half,seed them then put them in the oven at 350 and keep an eye on them until they’re soft. Once they are soft we scoop out the meat and freeze it or eat it. We take butter and brown sugar and cook them in a pot like yams. That was a good size and pretty tomato, I got a few I believe could break the WV state record of 6.5 pounds if all goes well!!

      @@LazyDogFarm well I’ll hopefully have some growing that get that big!! You get a chance go look at the mega blooms I have on these plants and they aren’t even my competition plants but may turn into the ones I take to the state fair! It’s the best way we’ve found to do our pumpkins and squash and freezes and keeps well. I would like to get one of them harvest right freeze dryers cause that would be the cats meow especially since jars,lids, rings are so hard to find right now! It does take a while to do the freeze drying but the advantages are definitely there over canning for certain applications and purposes!!

    I grew up in Massachusetts. What you all just harvested as pumpkins we call squash. Normally the butternut and cushaw are best & used extensively in New England for "pumpkin" pie. I'm wondering if that Autumn Gold butternut got cross pollinated with something else (maybe the cushaw) accounting for its unusual color combo. It does look very decorative. The sizes you harvested of them seem perfect for one. I'm wondering how long they will store for.
    That kubocha squash is very pretty. I haven't grown the Spotted Hound yet, but I have previously grown other kubocha that looked like that flattened round green one. That was some really good eating, and is a favorite.
    I'm just now planting squash & melons up here in Iowa. As it's about a month later than I'd planned, it will need to be restricted to some of the 90 day varieties. Do you ever plant the 90 day melons? If so, what has been your experience with them?

      The butternut shouldn't have cross-pollinated because there were no other C. moschata species in that plot. The giant pumpkins and the kabocha could have cross pollinated since they're both C. maxima. I've never planted any 90 day melons.

      They're not supposed to cross-pollinate because they're different species. Those kabocha squash start out green and then develop their pinkish-orange color as they mature.

    I was given a turmeric plant in a pot a few summers ago, at the end of summer I emptied the pot and found half a kilo of turmeric. I broke it up into small pieces and planted it out the following summer at a spacing of 150 to 200 mm apart into 2 raised garden beds 1.2 by 2 meters each, good soil with plenty of compost. 1 bed had partial shade and the other, full son till 1pm then shade. both did well, we harvested around 15 kilos at the beginning of winter 2022 when leaves died back. Not bad from one plant. Tried ginger, and I think it doesn't like direct sun. never the less, I will try again and this time in part shade.
    We live in a subtropical climate on the eastern side of Australia in New South Whales and just below the Queensland border, occasional summer days hit 35 to 40°C, and this summer so far ranged from 23 to 34°C to Dec. 23

    I would love some of that winter squash if I didn't live a thousand miles away from you up in the north. I have plants, six inches high and it will probably freeze before I get anything, but I love squash and just poke a few holes in them, wrap in wet paper towels and cook on high in the microwave until soft. I'm happy eating them with a little butter and salt and pepper or blended up with a little onion and herbs and heat up and make a soup, so I don't have any fancy recipes for you, but thanks for the videos, and hope the healing goes well.

      Yeah if you live up north, you've gotta on time with the winter squash planting to get a crop before the frost. But I've seen guys in Vermont grow a fabulous crop of them, so it can be done.
