    after watching this video I am canning meatballs I love them just for a snack while watching tv and to lazy to cook a meal LOL oh well just me now , :-( hubby passed away so I don't have to cook as much as before. My husband got me into canning :-) He loved showing me the things his Mom taught him to can. So I guess you would call it passing down the tradition :-) I know it is fun and it is super fun watching you , I have watched and learned from you a lot from quilting to canning. Thank you and God Bless you and yours.

    I can't WAIT to receive my first ever pressure canner (doubles as a regular water bath canner, too!...who knew?!). I've been putting it off for forever out of fear of exploding canners. But now is the time to get over my silly fear and take the proverbial horse by the reins! I've been collecting canning jars and I'm ready to get this canning show on the road! So excited to get all kinds of meats done and my new canner is just in time to get all my home grown tomatoes canned up, too, once it's time to harvest. Thank you for this video!!

    I have 13 pints of ground turkey/pork, seasoned with sage, rosemary, thyme, garlic and salt, processing right now in the pressure canner!! Then doing beef meatballs next 😊

    I do almost the same thing, but I put them in the oven for 15 mins at 350, they are cooked through. I put chopped onions, soy sauce, Worcestershire, salt, and Montreal steak spice in the meat. I also sometimes put yellow beans and potatoes, the broth I put can be used to make gravy later. Great video!

    I absolutely LOVE & APPRECIATE the fact that you stress safety, rules and NOT to try to rush the cooling down process.
    People new to canning need knowledgeable and seasoned canners like you to guide them.
    Too often I've seen other channels saying that the blue book or FDA says do it 1 way but grandma did it another so they use granny's methods.
    A couple even say it's okay to pull the weight off as soon as times up i always laugh when they wonder why their jars don't have much broth and need vigorous cleaning to remove grease from outside or jars don't seal.

    Because I missed out on canning last year, I am canning early this year to get ready for harvest canning. I thought of canning meatballs, and WOW! you had a video on it!! So, once I can all the sprouted chickpeas, and the lentil soups, I am going to can your meatballs recipe, which looks super scrumptious. Thanks again, Bev!

    its hunting season, hubbies son brought over a deer, I skinned it for him, and he leaves me some meat, after grinding and mixing, I made 976 meatballs, than canned 28 quarts, enough went in the freezer for 3 meals, Thanks for reminding me of another meal I can have on the shelf, I shared on one of my facebook pages, new idea for many,

    Love those quick meals! I am so behind in canning because of sharing a kitchen with my nightmare MIL. They are moving out soon, thank you Lord! And we are moving to a Homestead FINALLY in a month or two, Whoohoo!       Apparently, you take your vines and give them a good beating in a bowl. Then you cover them with any vinegar you like, cover the bowl, put it in the refrigerator and wait for at least an hour(said the video I watched, but I assume the longer you let it sit the stronger the flavor). Strain the vinegar with a cheese cloth and store in a mason jar. I bet it'd be wonderful for dressings and sauces!

      i do that with my spaghetti sauce without meat . it adds so much flavor n smells wonderful . i just fish them out when it's done cooking . i learned this from an italian guy on you tube . it makes sense now with the vinegar . ty for sharing , i'm so doing this . have a great week !!!

      I have. Research it well & decide for yourself. I've really looked at the Mennionite & the Amish. I've canned milk, pumpkin butter, sweet potatoe butter for yrs. Practice correct headspace & cleanliness.

    Good video, of course!!! I just did these up this a.m. & , even tho lean ground, (Metro's in-store special), I am amazed at how much, (tho not "tons"), fat comes up!! Oh well, I think the thin layer, in the jar, helps keep the meat fresh. There was even some under the rings, as I removed them tonight, (I was up early, has been more than 12 hrs)!! So, I think wiping the rims with vinegar somehow helps protect against post-closing-up-the-jars-fat-leakage. The newbies should NEVER skip or scrimp on steps; so sad to see so many posting BAD canning practices! Glad u r having a bountiful autumn!! All the best 💖

    Great video, Mrs. V! I had a nasty pressure cooker incident as a novice cook, so have never used one since, but you make it look easy! I may have to try again. It took me a long time to get that chicken soup off my ceiling! I do a lot of water bath canning successfully.

    Canning is not widely done over here in the UK, but I am seriously looking into it. What are you top tips for choosing a canner?

      If you are going to import one all the way to the UK..get a GOOD one..an All American! I have one..but it is still in the box..waiting for the day my others start breaking down..because the all american lasts forever!

    I baked meatballs and canned with beef broth but dont like the taste so I am going to fry them in a cast iron pan then can them and see how that works for me. I may just can them in water this time or do half n half. Thank you Mrs. V for all you do.

    I've canned meat balls before but in tomato sauce. I think without sauce is a good idea as it give more options when you're ready to use them.

      That's easy! Butter a casserole dish..boil some noodles..throw in a sliced onion, some mushrooms and celery..the meatballs and some gravy..top with with grated parmesan cheese and bake!

    Hi I was wondering if you could tell me if I could use store bought meatballs to can. I have 4 large bags in my freezer I bought them from Walmart and I didn't realize I had two bags already in my freezer and need to do something with them

    I'm going to try doing meatballs and canning them, last year I did northern beans and ham and I canned that in pint jars - works great for a quick lunch :) :)

    Do you have to use a liquid? Or would it not work with out it?

      You probably could can them without broth..but they have to be cooked..and they might come out dry

    Just wondering abt lids. I think I remember someone saying that the new lids that come on the new jars at the store can not be used for pressure canning or any wet canning. They can be used only for dry canning. Does it have something to do with the brown rubber seal on the lid?

      I have not heard this but I believe that the new ball lids do not need to be heated in hot/boiling water to soften them. Always a good idea to do a little research.

    That's great. I got myself an all american pressure canner and it's pretty big. What if you don't have enough jars to fill it up? Can you run through partial batches, or should you can something else with it? I love your videos I've picked up a few great recipes. I must say.

    Hello! I love your channel. I hope this is an ok place to post this question. I am fairly new to pressure canning. i recently canned some stewed tomatoes. when they were done the liquid level was a little low, maybe an inch below the recommended head space, and there were tomatoes stuck in the lid. the lid seemed to be sealed. Is it safe to keep them or do I have to throw them away? Thank you so much from a panicked newbie.

    I'm not real fond of canned ground meat. The texture is "off". How do these come out? I'd love to do some meat balls. Hubby loves them.

    I love to watch it continue to bubble, I don't know why,..... I find it fascinating.... I have had sausage links bubble for two hours outside the canner. Why does it do that? The seal has already made the popping sound. The ceiling fan has been continuously spinning, cooling them down... still bubbling... hahaha.. my crazy thoughts for the day :)

    Ok! I just canned up some of these awesome meatballs!! I did not use parmesan to bind. I did use Better Than Bouillon for the liquid, but I had like a quart leftover. Do I can that for next time or pour down drain? Thank you!!

      Can it. Why waste it. You likely don't need to can it as long if it wasn't cross contaminated but don't quote me on that.

      If I was doing them for the freezer I would..but I don't like the frozen ones..they lose flavour and texture in the freezer

      OurHalfAcreHomestead I don't can. Nor do I have the equipment to do so. I thought this might be an alternative to having my meatballs when someone drops by for a visit and I don't have time to make my special spaghetti & meatballs.
      It would be a boon to just pull them out & put them in some homemade gravy. Instead of having to make the MB's & the sauce.

    I have never canned meat, but I so want to try. Will the meatball have a mushy consistency when you open the can or will it remain firm? Dave is wanting me to can bacon jam. Is there anything I should do differently than what you've taught me here?

    I thought pints were 75 minutes. I process my meats in pints at 15 per-p at 75 minutes. Please explain. I’m confused. Ty for the vid and info. Take care.

    Dear Mrs. Volfie. Do you ever have a problem when opening the meatball jars later that the meatballs are falling apart or easily crack? Or do they stay solid rounds from both leaving the jar through cooking them?
