    Great video and recipes. I always buy the following at the local supermarket/grocery store are:
    1) All the vegetables i need.
    2) Omega seed mix( contains sunflower seeds, pumpkin seeds, flaxseed and either hemp or sesame seeds.
    3) Oatmeal.
    4) Canned Tomatoes
    5) Canned Beans
    6) Rice
    7) Pasta
    8) Vegan Chocolate
    10) Fresh Herbs
    11) Stock cubes.

    Never thought of putting cauliflower rice in tofu scramble, genius! I always have a plethora of nut butters ready to go, as well as frozen fruits and veggies and whole grains. Life is so easy when you're confident in the kitchen and have a stocked pantry. Less decision fatigue!

    Try sautéing apples and onions with sauerkraut! It’s how my family makes it and it’s amazing with any veganized polish dish ❤️

    Wow that soy milk tip actually blew my mind!! I have a hard time when i do flax eggs it makes baked goods way too dense.

    Lovely vid with some great things I'll be trying asap 😀. Another savoury use for apples that I have is for celeriac and apple soup, it's super easy and a lovely winter warming soup😋. It only uses a few ingredients aswell:
    1oz margerine or oil
    1 medium celeriac (peeled and chopped)
    3 small dessert apples (peeled and chopped)
    1 pint vegetable stock
    Good pinch of cayenne
    Salt +pepper
    Paprika (to garnish)
    Sauté apple and celeriac in margerine for a couple of minutes, add stock and cayenne pepper, bring to boil then lower temp and cover and simmer for 20 to 25 mins or until soft. Purée with blender. Season to taste and serve with a dusting of paprika. Makes 2 good sized servings.

    In poland its very popular to make a salad like this - grated carrots (about 3) with a grated apple, teaspoon of sugar, a little lemon juice, salt, black pepper, and just a little bit of (vegan) yogurt/sour cream. shredded salads like this are very popular and many use apple in this way!
    another popular one is to do just as above, but add sauerkraut, and instead of the yogurt/sour cream use a bit of oil. :)
    i recommend this as another delicious way to use apples!

    Ohh! I love the dates/PB/chocolate snack! I haven't made them in a while, but if you use crunchy PB it totally tastes like a snickers bar! 😋💕

    So many great ideas! There’s never a consecutive week where I buy the same ten things but 10 things I always have on hand are. Fresh or frozen bananas, various nut butters, oatmeal, snacking and baking chocolate, canned or frozen home cooked beans, assorted grains to cook, frozen veggies (I like the medleys) carrots, celery, lettuce, and potatoes.

    Soy milk, apples and bananas are my "always buys." I also always have a few different milks in the fridge, right now it's oat, vanilla soy, and cashew! And I love to cut up apples in salads...especially with some candied nuts. I also add it to mock chik'n salad, using the Tofurky chicken, I always add either apples or grapes and it's so much like a deli salad, really good!

    I have a great tip for cutting down on the acidity of tomato soups / sauces: Baking powder! You have to use much less, don't have to worry about getting a super sweet soup / sauce, cut down on sugar and - at least where I live - it's much more cost effective.
    I just add it when the recipe calls for any sort of sweetener.
    (The reason why that works is because baking powder has a high pH-level, it's basically a base (lol), so you neutralise the acid!)

      Why powder and not soda? I know that soda is a base, but I thought powder has a bunch of other additives along with baking soda.

      @@marcya4428 Well, it really doesn't make a huge difference. Baking soda is NaHCO3 / Na2CO3, baking powder just contains that plus Na2HPO4, there is no more additives and nothing to worry about, so it's up to you. Where I come from, all I get is powder, that's why I recommended that😀.

    Oooh I love the cauliflower in tofu scramble idea!!! I chop apples for a salad to get a sweet and savory combo (with chopped romaine it’s a lot of nice crunch), and I snack on semisweet chocolate chips instead of chocolate bars.

    Wow. This is so informative, Nicole. I love this kind of video. Thank you for including recipe ideas too! You really need to have your own cooking show because everything you make looks a-mazing! 😋 I always by some type of greens, cucumbers, radish (ok, you convinced me☺), carrots, avocados, blueberries (fresh in season, frozen out of season), lemons, lentils, tofu (I wish I liked tempeh 😭), sweet potatoes, soy and almond milk, tortillas, and nut butters. 😃😍

    Idk why more people don’t buy soy milk! It’s the best! The protein alone is reason enough to buy it!

      I found that if I eat too much soy I get a stomachache 😞 so I usually try to just eat it once a day, usually in the form of tofu. I would love to have that extra protein tho!

    I'm "ahimsa" vegan which means I only drink milk from cows who are taken care of for life and the majority of the milk goes to the calf.
    That means I don't buy any milk products from the store, so I'm mostly vegan most of the time.

    I always have oatmeal on hand also. When I bake I put oats in the food processor to make oat flour and it saves me from buying oat flour separately. It’s a money saver.

    Those date truffles😍 they could be filled with anything you love. Maybe Tahini and covered in vegan white chocolate and topped with ground nuts😮 one of the first things I eat to start the day is a Date with a cocoa bean. Super healthy

    I love adding salsa to cooked quinoa. From there it’s a delicious side dish to tacos or I throw it in a burrito with black beans, sweet potato and other veggies. I did it the other day and my wife said, “Whoa! This is really f*cking good!”

    My daughter loves apples so it is something I buy all the time. I'm going to make them the way that you did, that looks so good & pumpkin hummus oh yes. I always buy soy milk and almond milk bc my kids don't like the same plant milks. I usually do by tofu all the time but I got tofu out. I've been buying tempeh. I always buy chickpeas, black beans and kidney beans. I always keep them in the pantry. Thanks for all that great tips Nikki.

    Also Chipotle’s pico de gallo is so fresh I always get a couple sides of it with my order whenever I go since I add it to other recipes just like you recommend to add salsa to recipes! ❤️

    Your recipes always look so delicious! I am a new vegan and I am struggling with what to cook. Did you struggle with meal ideas when you first went vegan?

      Hey! Congrats on going vegan! How long has it been so far? Honestly watching a What I Eat in a Day Videos (I have a ton on this channel) helped me a lot because it really helped me see how many options there are and it got me excited to make vegan meals. Highly recommend watching those for ideas. Also I didn’t go vegan overnight, so I just focused on making simple swaps and finding products/ meals I loved. It helped to make the transition into plant based eating really enjoyable and I think that’s part of what made it “stick” I’ve been vegan for 5 + years now 🙌🙌

      @@NikkiVegan wow how awesome five years! Well I attempted to go vegan a few years ago and had a hard time finding meal ideas and staying full. I can’t have soy or gluten so it’s a little challenging. I started transitioning again after watching a bunch of episodes of the vegan view! and tons of documentaries. And I’ve been subscribed to you for awhile. I haven’t had any cows milk in like seven years or longer. But I would say I’ve been officially vegan for about a week now. I’m really having a hard time knowing what to make because I have some restrictions. I live in a small town that doesn’t have a lot of options but with all I know and have seen, I can’t go back.

    Woooow thank you Nikki !!!!!!!!!! Thank you sooooooooo much!!!!!!!! This video was packed full of so many recipes, tips and foods to buy when shopping, we are so fortunate to have you!!!!!! We are trying to build up our spices from around the world, but as we all know spices are expensive so one thing we're doing is just buying one or two each week and we're slowly getting there........at the same time I'm trying to learn how to use them, lol!!!!! Have you ever done a what spices to buy video? Hmmmmmm I'll check!!!!! I know this is kinda extra but I'm also trying to learn how to use vegan wine and alcohol in our cooking, I know you use white wine in some of your recipes and I'm always really watching and learning🧑🏻‍🍳and I love tomato paste a great tamari, and miso to add depth of flavor. A difficulty is finding...I'll probably spell it wrong, but I think it's kefir lime leaves and lemon grass that is fresh or even dried in some way, I have found them on amazon, but ???? I know I'm having a little explosion of food thought ........ it's just that you inspire me so so much and then I just get so excited. You did such an awesome job with this packed full of knowledge of 11 things that you buy every time you shop, you really rock guuurl !!!!!
    Keep staying safe everyone and vote Biden/Harris knowing our our democracy and our lives and the life of our precious Earth depend on it... because they do, straight out. Countless officials, Generals and the list goes on and on, are distancing themselves and some out and out denouncing trump at this point and many, many have been for a long time....I could go on.... obviously, I'm pretty sure I'm preaching to the choir here on Nikkis channel, BIDEN/ Harris have the most progressive plan yet ever to actually put on the table from a presidential candidate for the environment, our precious Earth and ALL beings here and throughout the world, they know climate change is real and have doable plans to change and recreate the way in which we do things.... it's so involved, go on their website, see the last BIDEN'S town hall, they have so many other healing, thoughtful, intelligent, desperately needed plans to help us heal and get the absolutely imperative help that is needed for us ALL now and with our future and in so doing our precious Earth and to top it off a younger Very powerful and experienced intelligent heartfelt compatible Vise President running mate!!!! WE can do this everyone, firstly by voting BIDEN/HARRIS and helping and encouraging others to understand and VOTE we cannot be complacent, VOTE LIKE ALL OF OUR LIVES AND THE LIFE OF OUR PLANET DEPENDS ON IT.....BECAUSE IT DOES.

    I love cooking apple with sweet potato and purple cabbage, but find that they do NOT go well with onion or garlic 😝

      That makes sense! I think alliums are hard on a lot of people! Do garlic powder/onion powder effect you in the same way?

      Please do! It’s honestly so delicious! Hope you enjoy! I cut the apples, sauté with a little splash of water or some coconut oil. Then add cinnamon, a squeeze of orange or lemon (optional but YUM) and sometimes some maple and/a few drops of vanilla. There’s so many ways you can do it and they’re all delicious! Hope you enjoy!
