    Hi , would like to ask why my sauce is a bit bitter and sour ? I am using Bordeaux wine and commercial beef stock and add some gelatine powder

      Hello! It's very likely that the wine hasn't been reduced enough. If you leave too much wine, it does add acidity. I recommend you trying to reduce the wine until almost dry next time! In terms of it being bitter, it is very hard to say. It could be burnt vegetables, burnt sides, etc so I cant say for sure. I hope it was still enjoyable though! Thank you very much for watching :)
