One of the most irritating things when people say they can’t afford to bulk is when I ask what the diet looks like, and their protein of choice is the most expensive cuts of chicken and beef they could possibly find. Along with the most expensive protein powder their favorite influencer is promoting lol.

Very close to what I do, except I live on insane amounts of oatmeal. Gotta make it as cheap as possible when you live in poverty. Always check the sales for the week, always check the "about to expire" section for some great deals. As long as you plan and cook everything in time, you'll never waste food. Looks like a great plan.
Something that Ive been finding has been making a big difference for the last few months is pre/intra and post workout carbs to replenish your glycogen as soon as possible. Keeps my energy levels more stable and get me back working out sooner. And it seems to lower my carb intake overall.
A good explanation and one way you can do this is in Ryan Humiston video "Drink THIS Every Workout!"
Easy to do but not something I thought in this way for years.
You might be able to swap out a little of your carbs by timing them more appropriately. And add back a few healthy fats like avos, walnuts/pecans, macadamia nuts for some examples.
    Goodluck!

Maltodextrin powder is pretty cheap, especially when you catch it on sale. It dissolves easily and is very fast digesting carb with little flavor of its own so it doesn't conflict with whatever else is in your workout water bottles.

A great budget option for a bulk imo is chicken thighs (or if you have access, costco rotisserie chicken). Chicken Thighs are a solid source of calories, both protein and fat. When paired with a solid source of carbs and (if ya nasty) a marinade of your choice, it's really, really ridiculously good tasting and still has pretty solid macros. For 300 g white rice it's about 390 calories, about 87-88g of carbs (ty google) and for 100 g of chicken thigh (about 1 1/2 to 2 chicken thighs with the skin on depending on how large they are) about 250 calories, 15.5g of fat and 25g of protein. It's really a great cut if you don't mind the fat content and, as a result of said fat, very flavorful.

I've been Carnivore for 5 years now (I tried Keto, got lazy dealing with veggies and realized Carnivore got rid of my ptsd nightmares/night terrors, something nothing else has done).
Anyways, regardless of why, I've found Carnivore to be super cheap. Ground beef, liver, eggs, tuna, cheese, and cheap cuts of meat. Buying bulk, freezing what I don't need now, and my food budget is around $300 a month for 2 people, in 2024 (and this counts the food and bedding care for my backyard flock of chickens). I still get variety (eggs are immensely versatile) and use herbs.

Big difference once I ditched bread and rice.
Protein turns to glucose when in excess. Dump the carbs and increase the fatty meat.
Never want to mix fat with carbs, though, so go low fat/ high carb if you need carbs.

Instead I've added in nuts, primarily walnuts and almonds, as well as olive oil. Kind of a mediterranean diet type of approach I guess. Not as cheap as just hammering the carbs, but healthier and keeps me from becoming diabetic.

I was sort of multi-tasking while watching the video...but is that template accurate for you two at the end? 2050 calories for you, and 1460 for the wife? That sounds closer to a harsh cut rather than eating to grow. I remember when I lowered myself to 1,800 calories 2-3 months and dropped tons of weight super fast. But lost tons of strength and growth in the process. I think I upped it to 2000 but kept losing more weight, and then bumped it to 2300 kept losing and dropped to near sub 10% body fat.
Right now I'm eating closer to 4000-5000 calories a day. Eggs and oatmeal (With Protein powder) are my best friend as I can get a good chunk of protein, and calories/carbs while also being fairly cheap. I can't bring myself to buy the fatty ground beef anymore, so I buy 96% as well, along with ground chicken/turkey, and chicken breasts. Though while I watch myself on the condiments as a habit from my weight loss journey, I do find the meats and stuff expensive. But that's probably my fault for eating like 1.5 lbs of grilled chicken in one sitting. lol

Chicken breast is fucking awful. I don't know how everyone eats it all the time? So dry and boring. I lose my will to live trying to eat it all the time.

Try learning to cook? Not trying to be rude but if your food tastes bad think about how it could be better next time.
I like slow cooking chicken breast in broth and shredding it up for tacos or burritos. Or brine it and grill it.

If your chicken breast is always dry and bland you have a skill issue. Learn how to cook and buy some seasoning! Even chicken, broccoli, rice will taste great if you actually season your food.
