Corned Beef & Cabbage With Root Vegetables

  • This Irish American traditional Saint Patrick's Day meal is made with Smoked Corned Beef.
    Irish Soda Bread Muffin Ingredients:
    1 & 1/2 Cups All Purpose Unbleached Flour
    3/4 Cup White Whole Wheat Flour
    2 Teaspoons Baking Powder
    1/4 Teaspoon Baking Soda
    1/2 Teaspoon Salt
    1/3 Cup Granulated Sugar
    1 & 1/2 Cups Dried Currantes
    1 Teaspoon Caraway Seeds
    1 Large Egg
    1 Cup Buttermilk
    6 Tablespoons Melted Butter or 1/3 Cup Vegetable Oil
    Baking time 20 minutes in a 300 Degree Preheated Oven
    Spray a generous amount of pan release in preheated muffin pans

    Probably the best looking corned beef and cabbage I have seen! I definitely took notes on this video Bill! Soda bread muffins with a ice cream scooper? I would have never thunk it! 😉

      Thank You Alone! It was a big hit and yes. We did sell out. I use ice cream scoopers of various sizes for many things from making meatballs, crab cakes, hush puppies, Mac & Cheese and pulled pork bbq. The scoopers are great for consistent portion control, and uniform sizes. Thanks for watching & chiming in!!

    Fantastic Bill once again! I could watch you cook for hours because you are so inspiring to us all to try new things in the kitchen. I will definitely be doing this but one short cut of smoking a store bought all ready corned brisket, yes I know I will be cheating myself a bit of satisfaction of doing that step for myself making it for the first time I ask for your forgiveness.       Terry, I used store bought corned beef last year. It turned out Amazing! I have cut the pink curing salt by half from 4 teaspoons to 2 teaspoons for the corned beef we will be serving in the restaurant. I am not a fan of too much salt. The nitrate content is really high in the pink curing salt. Actually, you don't even need it at all except to achieve the pink/reddish coloration. It really does nothing for flavor.
