Morocco has some ultimate street food, and here in Rabat there is loads of street food to be had in the old medina. On this ultimate street food tour in Rabat, we started off our day with the local medina sandwich of habricha, full of meat and spices. Head meat is a popular Moroccan food, so we had to try a steamed cow head sandwich, too. This cow head meat was super tender and tasty, full of flavour with a yummy cumin addition.
To continue our ultimate street food tour in Rabat, Morocco, we went looking for the most popular food in Rabat and tried out some delicious local pastries and the popular Moroccan food of merguez sausage. Merguez sausages are a popular street food in Morocco. Grab your merguez sausage, put them in fresh Moroccan khobz, and you’re away!
Last stop on our ultimate street food tour in Rabat trying some of the best street food in Morocco, was at Dar El Medina to watch the preparation and cooking of a massive Moroccan couscous. Couscous is Morocco's national dish, so this was a special treat for us, since we’ve been wanting to see the preparation of Moroccan couscous since we arrived in Morocco. This was a massive Moroccan couscous, and the time and effort that goes into making this popular Moroccan food is worth seeing.

Great video again❤️❤️ You really know how to inspire your viewers. Thank you. I too love Moroccan pastries alot and I understand why some would think that it came from France or due to colonialism. However from my understand its quite different from those found in Europe, with honey, dates, nuts, semolina and dried fruits being the main ingredients. According to some sources, it was already being prepared in the 10th century in Al-Andalus (Muslim Iberia and north west Africa very tied) so you will see that due to a shared history at times people would get confused where it started. Al Andalus or Muslim Iberia might have had also a huge impact on French cuisine at a certain time.
Hey Maria, you're right there's a lot of influence throughout that part of the world at that time. We always find it interesting how cultures have such an effect on each other throughout history in terms of dishes and cooking styles. You really learn a lot about a country's history through their food. Thanks for the info and the comment!
Why Morocco is welcoming? Because the word Morocco came from Marrakech, founded in 1062 by the Moroccan dynasty Almoravid. Marrakech means in Tamazight/Berber : Amur n Akuch , "The land of God". There is an old manuscript written 800 years ago, titled in Arabic "Cookbook in Morocco and Andalusia" and contains more than 500 recipes of different dish and pastries in the era of the Moroccan dynasty Almohads (from Mauritania to Libya and Andalusia(south of Spain and Portugal)). Almohads founded the city of Rabat in the 12th century but their Capital was Marrakech

ولاكن رغم ذالك يبقى الطباخ متسخ جداً ويعمل بيديه مكشوفه بدون حافظة اليد ويمسح يده في زيف متسخ يجب مراقبة هذا الامر. نتمنى لهم التوفيق ولاكن سمعة البلد فوق الجميع يجب ان ينظفوا حالهم اهم شيء في الطبخ هو النظافة

Couscous is originaly from Morrocco. other North African countries like Algeria and Tunisia and part of Libya were Moroccan areas and Moroccans have brought coucous to these countries
Such a tasty dish, we tried it a few different ways and it's always been so good, especially the caramelized onions on top with cinnamon, can't beat it 😉 thanks so much for watching!
This is not correct information. Couscous is an Indigenous North African meaning Amazigh dish. Morocco, Algeria, Tunesia and Libya are all tied by blood/genetics so you cant speak about artifically recently made constructed borders to explain the "origin" in this context. They were not under "Moroccan rule" and even if this was the case its not an argument since you dont have to be "Moroccan" in North Africa to share similar or the same cultural traditions. Even the guanches of the Canary Islands had a dish similar to couscous. The peoples of North Africa share blood, genetics and cultural traditions incl food and couscous is one of them: its a shared Amazigh(Berber) dish, not Moroccan, Algerian, Tunesian or Libyan, meaning it belongs to all the peoples who trace their origins from this part of Mediterranean Africa(and to a certain extent Egypt too, while its not an traditional dish there) so lets not try to give credits to a constructed landmass, with respect to some differences which are indeed unique to each area of North Africa but couscous is most definately not one of them.

It depends from region to region. We don't eat couscous with our hands in Hoceima (Northern Morocco). And it can be seen as not respecting the others. But in other cities, you will find a lot of people eating it with their hands ;)
