Hi! As far as I know, left/right seams are to communicate who's responsible for covering the gaps (called seams) between defenders on a serve. Left seams would mean that each defender covers the seam to their left, so if it's between two players, the player on the right moves left to cover it, and vice versa for right seams. I'm not certain about this, but I think floaty left is a combination of two callouts: floaty, referring to the serve type to better anticipate the motion of the serve (float serves and spin serves drop differently), and left seams.
