  • Loaded Chipotle Prawn Nachos are the ultimate indulgence for seafood and Mexican food lovers. This recipe is easy to make and guaranteed to satisfy your cravings for a hearty and delicious meal. Here’s how to make it:
    Ingredients
    260g peeled king prawns raw
    1 tsp chipotle paste
    5 minced garlic cloves
    1 Tbsp Olive oil
    juice of 1 lime
    2 tbsp unsalted butter
    salt & pepper to taste
    4 tbsp finely chopped parsley
    160g grated cheddar cheese
    400ml whole milk
    1 tsp garlic powder
    1 tsp chili powder
    2 tbsp unsalted butter
    2 tbsp plain flour
    1 bag tortilla chips
    2 tomatoes, chopped
    2 tbsp pickled jalapeños
    1 can black beans, rinsed
    1 red onion, finely sliced
    2 ripe avocados
    1 tsp cumin
    1 bunch fresh coriander, chopped
    Method
    1. In a bowl, mix the prawns with 3 cloves of chopped garlic, chipotle paste, salt and pepper.In a medium size pan, add oil and pour in the shrimp. Sear the shrimp on both sides.Then add the butter, lime juice and parsley. Stir ix for about 1 minute then transfer to a bowl and set aside.
    2. In a saucepan on medium heat, melt the butter. Then add the flour and stir constantly until a thick paste forms, gradually add the milk and cream stirring constantly until it thickens.Add the salt, garlic powder and chili powder. Turn the heat off and add the grated cheese. Whisk until mixture is creamy and lump free.
    3. In a small bowl, mix the avocado, ½ the red onion, 2 cloves of garlic, lemon juice, salt and black pepper.
    4. Preheat the oven to 180°C. You can use a baking sheet or round cast iron pan. Start by adding the tortilla chips, grated cheese, black beans, cheese sauce, tomatoes, red onions, pickled jalapenos.Bake for about 15 -20 minutes or until the cheese has melted.Once out of the oven, top it with guacamole, sour cream, shredded lettuce and top with the the prawns.
