Malai Kulfi | Homemade Ice Cream | Indian Ice Cream

One of my favorite summer recipes has to be kulfi. Its rich, creamy, and most of all-homemade! This lets you control the ingredients and sugar. (As much as my tongue loves sugar, my body absolutely doesn't need the large amount of sugar Kulfi has in stores.)

Ingredients:
Mawa:
1 cup heavy whipping cream
1/2 cup milk
1 cup milk powder
.25 tsp kesar (.50 TSP saffron if it's Spanish Saffron)
Kulfi:
.50 gallon whole milk
.50 TSP kesar (1-2 TSP saffron if it's Spanish Saffron)
1/3 cup sugar, or to taste!
1 tbsp American cardamom, or 1/4 tsp Indian cardamom
10 whole almonds, chopped
5 whole pistachios, chopped
