You can have the tiniest smear of a starter and save it. You can even feed it with a far too large amount of flour and water and it’ll still be mega active the next day.
It happened to me numerous times. I’ve stupidly used “all” of my starter for a recipe, then only remembered later that I should have held some back. I thought it was all over for my starter because I’d already mixed the dough for the bread but I noticed the was a small, unmixed smear on the mixing bowl. I scraped it off, diluted it into water and mixed in some flour to feed it. The next day I had an airy, bubbling starter again.

The starters were one of my favorite part of making Amish Friendship Bread. My Mom got me hooked on that ENDLESS cycle of chaos & deliciousness when I was 14/15. After I'd watched her enough, she let me do the WHOLE process myself for the 1st time, and as soon as she took a bite after it'd cooled enough, she made me make EVERY batch after that. I even had to DOUBLE it, because she'd let people know as it got closer to the actual bake day and she was taking request orders! I made a few hundred batches from between the time I was 15 to 20, then I got pregnant with my 1st daughter and I just COULDN'T handle the smell of the starters anymore and, unfortunately, I never got back into it after she was born. Been 15 years and when I think about it, I can smell the fermented batter in the ziploc bags and it makes me really miss making it.

A starter is just flour and water fermented over time, it can take weeks to months to be ready to bake. You can make your own, get some from a friend, or buy an establish dehydrated starter to jumpstart the process!

If you make bread regularly, you can save a golf ball size chunk off your yeast bread in a jar, in the fridge, and never have to buy yeast again. Wake it up a couple days before making bread by leaving it out to become room temp. Add some flour, and room temp filtered water, and it will be ready the next day, or later that day. Do the same thing each time you make bread. Yum!

*DON’T USE YOUR STARTER, MAKE A LEVEN* . You’ll never accidentally, or almost run out of starter this way. You want to keep your starter fermenting always, that’s what gives sourdough it’s distinct flavour. The longer the better-in an airtight jar it could last 100+ years! The night before you want to make bread take a teaspoon of your active starter and feed it in a fresh jar according to the amount of leven you’ll need. I’ve had my mother starter for over a year now and she is delicious.
Also, the correct phrase here, because you said ‘literally’, is “bursting out the top”, not out the seems as there are none.

I only store a few tablespoons of starter between bakings - just enough to make a levain the night before. Then it gets fed a few grams of water and flour and back into the 'fridge until next time. If it's been unused too long I just give it another tiny feeding. Snowball has been going strong for 20+ years. I keep some dehydrated, in case of contamination.

Thank you once again for answering another barrage of questions from me. I love how open you are about everything and how much you tell us.
And I knew you’d pick a K-pop group as your dinner guests because they represent a part of you that is fun and would be an awesome evening.
I forgot to ask too about when you became vegan and did you transition from carnivore, to vegetarian to vegan or did you decide when you were quite young that you knew veganism was for you??
As for UK food, it’s not that bad but I know the generalisation of stodgy beige food, unhealthy food that’s rich in sugar, fat and lacks flavour.
As a chef who worked in product development and recipe redesigns I completely understand why people would think we’re all eating potato and meat based dishes when in fact we eat lots of vegetables and many have either an Indian (due to the amount of Indians that moved here) or Mediterranean influenced dishes because of pasta, oil over butter and more vegetables like aubergine (eggplant), tomatoes and olives which could also be Greek and Spanish foods. Because of the closeness to France, Spain, Scandinavia and how close we really are to Northern Africa we eat lots of dishes that have these influences.
Bailey is definitely you in dog form as she is so sweet and intuitive but highly defensive especially around the ones she loves. I can fully understand why people want her and I’m shocked she was at a kill shelter. How could anyone give her up and put her in a horrible place. Teddy is just spoiled and knows it. When they were first introduced did they fight for dominance or was Bailey’s calm demeanour one that showed him they would get along like a charm?
After I introduced my niece to your music she’s taken a deep dive into your hair videos and is obsessed with the really colourful ones especially the blues and purples. She has ‘feed me acid’ on repeat too which I take full credit as I was listening to it and she was curious from that first sentence!!
Can’t wait for the Azheek video and how you came up with the characters.
