Honestly, creating iterations is my favorite part of doing Concept Art. I love exploring what things _could_ look like and how they could work, and then fine tuning things to reach a final conclusion. It's amazing seeing a character or design come together like that.
windows 10 and above has now the option to switch between greyscale with just simple shortcuts(ctrl+windows+c, just search in your windows for color filters and toggle on the shortcut) and its been super useful tool for me, i use it even when i just browse internet and stumble upon great images and take a note some of the values
