    Such an important but often undervalued skill is cooking. Cooking will never go out of fashion as people will always need to eat, and eat well. I admire all chefs who have a passion for one of the most important professions!

Almost everyone owns knives, people use knives daily for cooking, and they use their off-hand to hold the thing they are cutting, just like in the video. For example, people cut garlic in the same fashion as in the video.

    Very nice :) The sharpness of the knife is paramount. It's way more dangerous to cut with a dull knife than with a sharp one, as the chef clearly demonstrates. He also lets the knife do the work rather than apply too much pressure. I like this video.

      ***** Yeah I'm sure its not uncommon to see a rag used as a regular tool for this purpose... not as a cleaning rag, but as just to clear the surface for additional prep work, so long as the rag is clean and sanitary I don't have a problem with it, however I can understand the 'debate over its use for such task. I mentioned it, since I noticed its use in other Asian cooking, or food prep vids vids.

      ***** Yeah no doubt I was just mentioning it cause you always see especially Japanese and or Chinese using the rag as a primary way to clearing the board for further prep work and its understandable..I used to work at one of the busiest restaurants in the United Sates and used rags to wipe and disinfect, but its been my observation its one tool that can't be used too much in that respect, but the Asian's seem to always use it as it ties in to their skill set, especially sushi in particular.

      Yeah all kitchens use them it's bad practise not to carry a cloth with you in most English and French kitchens.

      Only three years i'll confess. But better safe than sorry. Imagine going up to the customer and saying 'you want food with nail or fingertips?' I will also confess cooking isn't my main profession, but secondary.

      hardwirecars coffee mugs are made of ceramic, the same material used in most sharpening stones however he cant possibly get it to a perfect edge because of the impurities of the ceramics in the cup...

      CAIDMASTEROFPYRO all i know is that was the absolute sharpest knife i have ever seen it would do the paper test with ease and cut hair off your arm like a damn razor and he has cut the tip of his finger off more times then most people and never even feels it. im sure its not a perfect edge under a microscope but damn for just using a cup it was amazing. you should see the filament sharpening(only works from certain light bulbs).
