Achieving dark colors of buttercream often means adding so much gel food color that your frosting starts to taste bitter. This method allows you to add a much smaller amount of food color and still achieve the dark color you are looking for. This technique is best used with homemade buttercream as opposed to pre-made frostings. Pre-made frostings are often made with only shortening and preservatives that cause the frosting to become very thick after heating and cooling. If you use a pre-made frosting with this method, we suggest adding some milk or water to make piping easier.

I note the commercial buttercream to start is thicker than the homemade one and the its color initially is already a shade darker. Also that after the process both buttercreams have hardened and look a little grainier. Is that correct? I found the video do not have a lot of comments on those details. You also mentioned to not overheat as it may split... did yours split? Maybe I do not think that the colors changed much but maybe it is because at the end of the video there were no close ups to show and explain the differences. Would love to see a more detailed video and more explanations :) Look forward to your next video
