I think it looks great and the fact that there's no crumbing it's not soggy as folks make out. Hardly original but one trick to make this even more scrumptious? Soak the chicken breast overnight in buttermilk and jarred pickle juice - old Southern Mama fried chicken secret.
Just add cornstarch to the sauce and pour it to the chicken or a side sauce instead of soaking it😢...or put the chicken on top of the rice and pour the sauce.
The method matters...this dish is called chicken franchese and this is how it's prepared. Learned it from my brother who owned and ran an Italian pizzeria and restaurant for years.

Cooking it in the sauce makes the chicken tender. I didn't cut the chicken, just pounded it. I didn't want it to be wafer thin. Also, added some white wine. Came out DELICIOUS 🎉
