    If you want to thicken it in the jar, add a TBS of potato flakes. I use it in my ham and bean soup…comes out great. If you’re wary of it just try it in one jar…you’ll find you like it! Take care, all…

    “Don’t take shortcuts in canning.” Thank you-that is the gospel truth right there. The temptation is real when you first start canning to skip this or halfway do that, and it inevitably ends up causing you far more time, work, effort, and potentially money when you try cutting corners. About the third or fourth canning project, you realize those steps are essential and actually make canning go far smoother and with less effort due to no failed seals, blown jars, and so on. You look great by the way-I never look that good when I can! 😊

      After water boiling the jars 3 hours to be able to can this I don't think I've taken any short cuts. But we don't like it with tomatoe. So I use some half and half or whole milk and a thick slice of cream cheese. We get the creamy taste we like and just for a quick meal I also make some in pint jars. It's great for those meals knowone knows what they want or everyone is getting home at different times and can choose this or a burrito Jar that I can, chili and some canned hot dogs.

    Made this recipe yesterday with a few tweaks (1/2 tsp of thyme per jar and 1 tsp of beef bouillon to replace salt, and 1TBS of Worcestershire) had one jar that was iffy on sealing so we used it for dinner tonight. FANTASTIC!!! Added a can of mushroom soup heated thoroughly then added sour cream at the end and served over egg noodles. (because of the soup I boiled 3 cups of noodles) Made 4 healthy portions. KEEPER!!!

    For my meatloaf, I use potato flakes to absorb extra moisture control. This makes it gluten free. A pint jar makes 4 slices. Put the slices in a skillet to dry them off. This was one of my dad's favorite quick meals. Makes great sandwiches.

    FYI: Redmond's Real Salt can be used for canning. It's UNprocessed and won't cause clouding like table salt. That's good for me since Redmond's is the only salt I keep in the house now. So I don't have to buy a separate salt just for canning. 👍

    I just canned this recipe, I haven't open a jar yet to try them. I have never used tomato paste in my stroganoff before so I hope we like them. We have our half a cow coming so I have to make room in the freezer so I have been canning all the meats.

      I was thinking the same thing about the tomatoe ... When I make stroganoff ive never used tomatoes in it... I would probably not put in the tomatoe paste because I like mine more cream base so I would just add the cream when I opened the jar and thickened the liquid... I have lalf a beef coming in January.

      Some people have left off the tomato paste and waited… added cream of mushroom soup to it after the canning.

      My original stroganoff recipe came from a cooking for two cookbook I got as a wedding gift in 1971. It was made with meatballs and had a tablespoon of ketchup.

      Mine too! Jars, rings, paper towels, various dishes of ingredients spread out, dog at my feet waiting for me to drop something tasty (happens all the time), and the utensils everywhere…tongs, funnels, spoons, spatulas…it looks like a Tasmanian devil on speed went through!

    I tend to be an ingredient canner but always make beef stew because my husband like it if I'm away from the home. He would absolutely love this as well. Thanks for the GREAT idea! My hubby thanks you too! I recently made pork stroganoff and I think this would be a great idea canning as well!

    I love your easy way. Thanks for sharing.
    My only negative is that layering is not recommended by Ball. Everything should be combined in a bowl and packed into the jars before ladleing the broth. This is to insure even heat distribution during processing.

    I've never heard of using tomato products in stroganoff before. Bet it's delicious! Might give this a try with some venison left from last fall's harvest, to make room for the new batch. Thank you! 🙂

      I never heard of it either. Real Stroganoff is actually not made with any tomato bases. But this is a good recipe to add to the canning list - I would add red wine though.

    Hi Renae. I always use sour cream in my stroganoff. I don't make the red sauce one though I make the cream and sour cream one. I have made the red one once and added the sour cream instead of thickening it and I serve it over egg noodles. However my family preferred the sour cream and cream one which I have been making for 40 years or more. You pronounce worstershire like woostershire. That's how the English pronounce it as do us Aussies. England is where it comes from lol. I love worstershire on my steak. . .yum!! I think I'm going to can this recipe I just won't add the tomato paste. I'm really enjoying your one jar canning Renae. Michelle

      Can without the sour cream. Just add it when you heat up your beef.

      I would recommend trying this tomato Paste (not sauce) Recipe as is then adding sour cream when you heat it to serve it. I think you would be pleasantly surprised!

    Made this this weekend. Great recipe, however, I would reduce the amount of liquid in the jars to allow for the meat juice as it cooks. I had some siphoning from all the liquid in the jars. It was fun to make.

    Thank you thank you thank you for being a safe canner!! I hate seeing all the dry canning and other weird canning processes on UA-cam. I'm going to have to get the new Ball book. I love Beef Stroganoff, but I hate mushrooms. So I might have to tweak it a bit!

      You can omit the mushrooms and maybe add extra beef or onions. I never take short cuts and I am by the book safe canner. I tell everyone that I want to give my family a healthy meal and not their last.

      You all must not understand people have been hot water bath canning for years. Way before any pressure cookers. And when the first types of pressure cookers came out,they were very dangerous because the lid would blow off. And the people would be covered in scalding food, broken glass. And ended up in burn units with the worst degrees of burns. The different ways to can is great, if you don't like doing like others just don't do it. But about every canner has history going back to many generations on less knowone every canned around them growing up.

    I knew I recognized that Michigan accent! I didn't think we Michiganders had an accent until I moved away. Haha.

    I guess there are different versions of stroganoff? I grew up with a more mushroom/onion sour cream gravy with beef. Never with tomato paste/product involved. Still looks yummy.

    I'm more of a ingredient canner. But I may try a few of the meals in a jar type things for a super quick meal!
    Never heard of tomato in stroganoff before! You need one of those big plastic funnels instead of the metal one! I love my plastic one the best!

    Hi, this looks delicious! Having meals in a jar is a great idea to stock up on for those unexpected events like breaking your back, yup I broke my back two days ago, I was camping at Harrison State Park in Michigan, fell and now I have a compression fracture, so this would be great for a time like this. I’ll be fine it’s not too bad, the Dr said he was going to use Fix a Flat or Mud Jack to put me back together.

    That's rule #1 in deli; frequent handwashing! Beef Stroganoff is a fine meal! Wow, that's great seasoning! I'd put A1 "steak" sauce in. Minnesota accent! All questions answered!

    I would have thought the jar would overflow with liquids since the meat was raw and gives off its own juices. Good to know this works. I'm definitely going to try this.

    Hi Renea! I'm neck deep in apples right now so seeing you canning meals in jars is just what I need! It feels so productive! Of course so is everything apple that I'm doing. This year was my highest yield for my orchard. I didn't even have to get on a ladder there's so many apples. I love your videos.

      @@ceepark114 hi Cee, yes I've heard from people around the country saying the same thing. I have a small orchard here in Southern Wisconsin and this year was the best year ever. I didn't even have to get up on a ladder. I just picked apples that I could reach from the ground, and I have so many apples that I don't know what to do with all of them. I'm about to begin my baking phase, I think. So far I've canned 42 pints of applesauce, 7 quarts of apple pie filling and 9 jars of apple butter. You know those big plastic buckets with handles made out of ropes? I have one of those mostly full yet. I don't want to bake that much! I know that it's a blessing but it's been overwhelming. The tops of my trees still are loaded with apples that will go unpicked. I'm hoping that over the winter winds will knock them down for the deer to eat and if not, I can feed them for most of the winter. They are difficult to store because of the ethylene gas that they emit. It'll turn much of them rotten if not separated. My house is only so big.

      ​@@suegeorge998remember with a root cellar, you can store apples over the winter. They can sit there with winter squash, onions and garlic. And potatoes too! Just don't let some of them touch. Research recommendations if you decide to try.

    Made this last Saturday. Had to buy roast, found at Costco for $4.99/lb. Nevever made before. Usually do ingredient canning. I did have some siphoning nut all sealed well. Going to get more beef & can some of the other recipes. Have had book for several years.

      Most siphoning is caused by too quick of a pressure change...It could be happening when you first start (if the water in your canner starts off hotter/colder than the food in your jars) or at the end (if the pressure is dropping too quickly) ...most likely at the end of the canning process. Be sure to leave your canner undisturbed once you turn off the heat and do NOT do a quick pressure release. It may take more than 1 hour for your canner to cool to zero pressure. (A slow cool will prevent most syphoning) Good Luck.😊

    Thanks for the demo of the meal in a jar. New to canning and just discovered these meals in a jar and I’ll definitely be doing. Can you please tell me what pressure canner you’re using? I have the presto digital one and I purchase the presto stovetop one but it’s too big and too heavy and yours look perfect and huh can do 7 quarts which is a bonus! Thank you.

    Looks delicious, thank you! I only know stroganoff to have a sour cream base, so I expected you’d mention the addition of sour cream at serving time. But I guess that’s optional. I will add sour cream to mine and serve it over wide egg noodles. 😋

      He is fine with me canning other foods just not meat. I keep saying freezers only hold so much. I might just do it so he can see it is just as safe as veggies and jellies.
