Great video, I am going to make this today! Have you ever drizzled lemon juice on top of the last layer of vegetables? My friend told me try it because I hated to have to throw any bit of it out. It makes the salad last several days in the refrigerator, without changing the taste. I even stir the dressing into it before serving and we eat it throughout the week. Now I put the lemon juice in every time!

Instant Pot, no idea why people use a pressure cooker for simple things. Cold water covering cold eggs, med high heat, bring to a boil, turn off heat and start a timer for 12 minutes, 13 if using jumbo eggs. Run cold water and add ice to firm up whites, crack big end of eggs, let sit for 30 minutes. Peel. Never any green around yolks. I love Instant Pots and pressure cookers in general but people have turned them into the hammer looking for a nail thing.

Use an egg slicer. Defrost peas first before adding or turns salad mushy.
And don't cook the eggs so long that they turn green inside.
Has anyone tried chunks of avocado in place of the eggs? It just sounds good. I can't decide which to go with.
We love avocado so I think it is a great idea...just make sure you serve it right away.
