Thank you for this. I use the same food processor technique. I do prefer Matzah Meal to flour. In my family I usually turn 5-10 lbs of potatoes into latkes at Chanukah.

I love potato Latkes!!! My mom will make it. It's a Polish dish. My mom's SO is Polish background 100%. Also, a Jewish dish. The only difference Polish can have sour cream with them. I like mine with apple sauce personally. In the choir I'm in we have a Jewish couple. They were talking about Latkes one time. I had to tell them that it's also a Polish dish. Usually, you can find them already made at Trader Joe's.
Also if you change your mind about Christianity your children will get a Christmas and a Hannahka in winter time and a Easter and a pass over in spring time
Time is a priority for you so you took some liberties and some shortcuts AND you used the wrong potatoes. Better find something else you might be better at. WOW

Jews also use sour cream. If they observe kashrut, they can’t serve sour cream (or dairy) with meat.

LOL, my mom doesn't have a food processor, so she grinds them by hand. She doesn't make it often; it takes a long time.
