It's finally time to brainstorm for redstone ideas, but sadly I don't really know anything about redstone..so there's no better time to do some of your ideas!
The biggest thing I think you could do is a sugarcane farm. With observers and such. Nice to get a lot of paper. Or some kind of piston gate to somewhere! Like a vault or something!

I saw some cool ideas on another site like a machine gun that shoots arrows, a teleporter, or a hidden base.
